相思芋丸擁有漂亮的名子,實際更是吸引非常,炸至金黃的芋茸內藏香甜的紅豆茸,口感上佳,令人愛不釋手,難怪得到相思芋之名。
Ingredient and Portion
(一)荔芋一斤
(二)生粉1/3 杯
(三)紅豆茸或蓮茸六兩
(四)麵粉一杯加發粉一茶匙
(五)熟油一、二湯羹
(六)油鑊
Method
(一)荔芋批皮,切成厚片,然後蒸半小時至四十分鐘,或至腍為合。

(二)將荔芋搓成茸,即加入生粉及熟油搓勻,然後分成如合桃大小粒,包入紅豆茸搓成丸子,黏上麵粉。

(三)將油鑊燒熱,將芋丸子投入油內炸至金黃色即成。
