鴨 1隻(一開四件)




Seasoning
南乳大磚 1/3件
麵豉 1湯匙
五香粉 少許
酒 2茶匙
生抽 2湯匙
薑蓉及蒜蓉 適量
片糖 1小角
Method
1. 將鴨洗淨切開四件。
2. 將所有調味料混合,加入鴨醃15分鐘。
3. 用少許油將鴨兩邊煎金黃,將餘下醬汁放入,加水至足夠掩蓋鴨身,用中火炆至汁開始濃時下片糖,汁煮至濃即可,將鴨切件即成。
Tips
炆鴨時需兩邊反,小心「痴」鑊。
