素菜烤雞

現今都市人都以健康為上,這款烤雞比炸雞及燒雞更健康。
Ingredient and Portion
有機雞肉 7磅重
低鹽牛油(置室溫放軟) 4湯匙
鹽及胡椒 適量
紅蘿蔔(對角切開) 3條
南瓜(厚切)2個
鈕形磨菇(切成兩份)8安士
薯仔(切半)1磅
低鈉雞湯 半杯
4種蔬菜作裝飾配料
Method
1. 將焗爐預熱到攝氏185度。
2. 雞肉沖洗及待乾,之後在上面塗上牛油,灑上鹽及胡椒。
3. 將紅蘿蔔、南瓜、磨菇及薯仔一同放到一個大碗上,加入已溶化的牛油攪均,再加入鹽及胡椒。
4. 把雞放到烤盤上,將素菜散開伴雞,把雞湯倒上。
5. 將雞烤1.5至2小時,不時把素菜轉動至金黃色,待雞肉焗至金黃色,將溫度計放到雞肉最厚的部份並顯示為180’F。
6. 將雞從烤盤取出並將其切件,把素菜配碟,即成。
Tips
大部分人會利用高火作為烤雞的方法,這種方法可將烤製時間縮短為45分鐘,但會較容易把雞薰黑並令整個廚房也滿佈白煙。
