脆皮奶皇月餅

自己好喜歡這個食譜,而且又唔會太甜。不過做一次月餅真係幾花時間,特別包餡時。不過味道又真係唔錯,而且我覺得自家做既月餅好似無咁油膩!
Ingredient and Portion
餡料材料:
蛋液 25g
蛋黃 1隻
糖 20g
吉士粉 25g
椰奶 1湯匙
奶 30g
椰奶 30g
奶 40g
糖 5g
牛油 25g

20G月餅皮:
低筋麵粉 70g
牛油 50g
糖粉 30g
吉士粉 12g
奶 12g
蛋 12g
Method
餡料:
1. 先將蛋液、蛋黃及20g糖拌勻
2. 再加入吉士粉、椰奶及30g奶拌勻
3. 將椰奶、40g奶、5g糖及牛油放在煲中煮至旁起泡及牛油溶
4. 加入步驟2材料
5. 再用小火煮到好似麵團就可放涼,再放入雪櫃最少2小時

月餅皮:
1. 將牛油放室溫至軟身,加入糖粉攪拌好
2. 加入蛋及奶,之後加入已過篩之麵粉及吉士粉攪拌至無粉粒即可
3. 放入雪櫃最少2小時
4. 將月餅皮壓平加入餡料包好,在月餅模掃上麵粉再壓花
5. 預熱焗爐200度15分鐘
6. 將月餅入爐前噴水,焗5分鐘取出掃蛋液
7. 再等10分鐘再掃多一次
8. 再入爐焗12分鐘
Tips
1. 預熱焗爐這段期間,可以將月餅放入雪櫃再雪硬身
