自小已知道杞子是益精明目的食材,還滋補肝腎,潤肺止渴,故今次選用杞子做麵條。除了飯和意粉外,麵條是家人日常喜歡的食糧,杞子麵,顏色吸引,味道不濃,家中小朋友必定喜歡。

Ingredient and Portion
(約做到4碗份量)
中筋麵粉 300克
雞蛋 1隻
杞子 半碗
菜油 1湯匙
Seasoning
鹽 3克
Method
1.杞子用清水浸軟後,打爛連水約120克,備用。
2.將所有材料放入盆內混勻,揉成麵團,待30分鐘,再揉至麵團光滑。
3.用棒將麵團滾平,撒些少麵粉在面,放入麵條機壓成麵皮,再撒些少麵粉,以避免黏黐,轉用切麵條部份切成幼條。
4.在幼麵條上撒些麵粉以避免黏黐,煮食方法與其他麵食相同。
Tips
1.嫌杞子的幼核影響口感,可將杞子打爛後用煲魚湯袋隔出汁液用。
2.如有麵包機或電攪拌器揉麵團代勞更方便。
3.沒有麵條機,也可用人手用木棒幹平麵皮,用刀切成幼麵條。
4.除中筋麵粉外,也可用小麥粉做。
5.清雞湯可用盒裝作湯底。
