芝士麻糬波波

很喜歡麻糬波波,自家製卻不愛用預拌粉。嘗試了三四個食譜綜合而成的結果,跟日式麵包店賣的分別不大,今天公諸同好。
Ingredient and Portion
(12個份量)
室溫牛油 1 1/2湯匙
牛奶 120毫升
木薯粉 8湯匙
糯米粉 3 1/2湯匙
黃糖 1茶匙
鹽 1/2茶匙
泡打粉 2/3茶匙
車打芝士粉 1湯匙
芝士碎 6湯匙
蛋 1隻
Method
1.牛油和牛奶以慢火煮沸,關火後馬上撞入木薯粉中,用橡皮刮刀快速攪拌至無大粉粒狀,備用。
2.混合糯米粉、黃糖、鹽、泡打粉、車打芝士粉、芝士碎和蛋(先拂勻),加入已放涼至微暖的木薯粉糰中,拌勻。
3.每次取少量粉糰,用湯匙弄成球狀,每個直徑約2.5cm,排放在已鋪烘焙紙的焗盤或不沾蓆上。
4.預熱焗爐10分鐘。先以200度焗10分鐘,再轉180度焗8分鐘,關爐後馬上取出,趁熱享用。
Tips
1.每個焗爐都有溫差,我家的是PHILIPS小烤箱,火力較強,請視乎情況而調節烘焙溫度和時間。
2.芝士碎依個人口味,採用Emmental、Mozzarella、Parmesan等均可。

2. 泡打粉不是梳打粉。泡打粉是 baking powder,一般超市有售。梳打粉是 baking soda,若材料具酸性,如酸味水果、朱古力、蜜糖等,我通常用梳打粉,或混合泡打粉使用。

順道提提你,務必用量杯量匙,否則份量比例不準。粉糰濕濕的就對了,我用迷你雪糕勺刮成球狀,成品很圓。用普通湯匙的話,先蘸少許糯米粉,並緊記儘量將球弄得挺身。
