Ingredient and Portion
(2-3人份)
蛋 2隻
冬菇 4至5隻
蟹柳 2至3條
Seasoning
鰹魚上湯 100毫升
水 200毫升
Method
1. 將蛋打勻,隔篩隔去雜質,再加入鰹魚上湯和水。
2. 冬菇切條,蟹柳打斜切粒。
3. 打混好的蛋汁倒入淺口碟中,再放入冬菇和蟹柳,用另一隻碟蓋好。
4. 鑊中放入凍水和蒸架,不用把水煲滾,把蛋汁隔水以中至大火蒸10分鐘。
5. 10分鐘後熄火,熄火後不要開蓋,再待5分鐘。
6. 食用時淋少量鰹魚上湯在蛋面上即成。
