魚的造型還是其次,若果喜歡吃荔芋所製成的素菜,這味小菜可俱大家參考。
Ingredient and Portion
(一)荔芋半斤,蒸腍泥成茸
(二)汀麵五湯羹,沖滾水約1/3 杯成汀麵糰
(三)腐皮一張

餡心:
(一)冬菇二件
(二)筍肉五錢
(三)麵根少許
(四)香菜心1/2 湯羹
(五)甘筍二片
(六)鮮菇三、四粒
(七)白菌二、三粒
Seasoning
荔芋之調味:
(一)五香粉1/4 茶匙
(二)冬菇水四湯羹
(三)鹽1/4 茶匙
(四)糖1/4 茶匙
(五)油三湯羹
(六)腐乳2/3 磚

餡心獻汁:
(一)生抽一茶匙
(二)糖1/8 茶匙
(三)生粉1/2 茶匙
(四)水二湯羹
Method
(一)餡心全部切幼粒,用油一湯羹炒香加入獻汁炒乾為合。

(二)芋茸加入汀麵糰及調味搓勻用腐皮一張墊底,將半份芋茸放上做成一條魚形按扁,然後將餡心舖上,再將餘下之芋茸舖上,再做成魚眼、魚翅等,然後炸至金黃色。
