數到色香味俱全的菜式,菠蘿咕嚕肉可算是一哥。「IC電磁爐.飯.堂」試煮班的何師傅話,切成條狀的豬頸肉,是製作咕嚕肉的不二之選,只因豬頸肉夠爽口,炸完也不會失卻口感。
Ingredient and Portion
鮮菠蘿 1/6隻
彩椒 1/4隻
蔥度 40克
豬頸肉 350克
雞蛋 半隻
生粉 適量
Seasoning
糖醋醬料:
白醋 適量
茄汁 適量
喼汁 適量
片糖 適量
Method
1.將鮮菠蘿、彩椒、蔥度洗淨放好
2.鮮豬肉切好加味料、生粉、生油醃製後,再下雞蛋、並上乾生粉
3.將電磁爐調至高溫(約180– 200度),將落鑊油炸豬肉至金黃,熟透後撈起
4.將菠蘿、彩椒、蔥落鑊爆香下加糖醋煮滾,放已炸好豬肉
5.加熱撈勻用碟盆盛起便可
Tips
用電磁爐可調較及設定溫度,直接及均勻地將熱力傳到鍋具,相比於傳統煮食爐,廚房溫度更低4-5度,擁有更舒適的烹飪環境。
