超簡單的調味,讓青口的鮮味更突出,用來做聖誕大餐,好味又容易,沾法包也好吃!

Ingredient and Portion
青口 500g
牛油 1湯匙
蒜蓉 1/2湯匙
白酒 2湯匙
車厘茄 6隻(或普通蕃茄1隻)
Method
1.青口以清水沖洗及用刷子去掉沙泥,拔去青口咬著的草,蕃茄切粒
2.平底深鍋預熱,煮溶牛油,中火下蒜蓉,炒約30秒下青口炒2分鐘
3.下白酒,轉小火加蓋焗3分鐘
4.蕃茄粒炒約1分鐘
Tips
1.如青口較大,可小火多煮1﹣2分鐘至全開口
2.如青口未開,加蓋焗至全開,不開口的是死掉,不能吃
3.開封後的活青口可以濕毛巾覆蓋放蔬菜格2﹣3天存活
