Ingredient and Portion
(一)冬瓜一個(約三斤半)
(二)蓮子二兩
(三)白果二兩
(四)冬菇十五隻
(五)白菌1/3 杯
(六)熟麵筋一兩半
(七)馬蹄八粒
(八)冬筍一隻(淨肉約一兩)
(九)青豆1/3 杯
(十)油二大殼
Seasoning
煮冬菇用:
(一)水二杯
(二)油一湯羹
(三)糖半茶匙
調味:
(一)鹽半茶匙
(二)生抽二茶匙
(三)冬菇水四湯羹
(四)胡椒粉少許
Method
(一)冬瓜切去蒂,挖去瓜瓤,瀝乾水份,將二殼油煮至大滾,倒入瓜內搪勻,將油倒去。
(二)蓮子放在滾水內加入梳打粉一茶匙,兩滾之後,倒出將蓮衣擦去,穿出蓮心留用。
(三)白果去殼,用滾水浸片刻,去白果衣留用。
(四)冬菇浸透,切粗粒,白菌熟麵筋、冬筍、馬蹄全部切粗粒。
(五)先將冬菇粒與蓮子用水兩杯,加油一湯羹,糖半茶匙,煮三十分鐘,然後加白果、馬蹄、白菌、熟麵筋、冬筍煮二、三分鐘,即可倒入冬瓜內。內將冬瓜盛滿八分水,先加鹽半茶匙,上鍋燉兩小時,燉好後加入生抽及胡椒粉,即可上檯。
