藍帶豬排,其實係由法國既藍帶牛仔柳改變而成,我想用豬排應該一樣咁好味既!另外呢個算係西餐,所以我就配上咖喱薯蓉一齊食!豬排外脆內軟,而且一咬落去就有香濃芝士流出,實在有多重口感!

Ingredient and Portion
藍帶豬扒材料:
細骨豬扒 4塊
火腿 1塊
片裝芝士 2塊
蛋 1隻
日式炸粉 適量
油 5至6湯匙

咖喱薯蓉材料:
薯仔 4小個
咖喱粉 2湯匙
鹽 1湯匙
糖 1/2湯匙
牛油 1湯匙
奶或水 適量
Method
豬扒做法:
1. 先將豬扒用刀背或肉類專用鎚仔敲至鬆軟。
2. 將火腿一開四切開。
3. 將芝士一開二切開。
4. 將火腿和芝士夾入豬扒中,將豬扒對摺,再用鎚或刀沿邊封口。
5. 蛋打發,將豬排件放入蛋液中。
6. 上好蛋液後,再放入日式炸粉中。
7. 鑊開大火,燒滾油後,將豬扒遂件落鍋,以半煎半炸的方法炸至金黃色即可。

咖喱薯蓉做法:
1. 將薯仔烚熟,隔水壓成蓉備用。
2. 薯蓉加入咖喱粉、鹽、糖、牛油、奶或水拌勻即成。
Tips
想測試油溫是否足夠,可用一小粒炸粉下鑊測試。
