Ingredient and Portion
(4-6個份量)
室溫牛油 6湯匙
白砂糖 4 1/2湯匙
蛋 1個
雲呢拿香油 數滴
自發粉 1量杯
梳打粉 1/4茶匙
鹽 1/4茶匙
淡忌廉 50毫升
新鮮藍莓 適量
Method
1.用打蛋器拂打牛油和砂糖至鬆軟,呈淡黃色乳霜狀。
2.分數次加入蛋液及香油,拌勻。
3.混合自發粉、梳打粉和鹽,分數次篩進蛋糊中,用橡皮刮刀切拌均勻。下淡忌廉調成幼滑狀,最後加藍莓拌勻。
4.預熱焗爐10分鐘。將麵糊傾進已放紙杯的焗盤中(每個約7-8成滿),以180焗約25分鐘,關爐後馬上取出,趁熱享用。
Tips
1.每個焗爐都有溫差,我家的是PHILIPS小烤箱,火力較強,請視乎情況而調節烘焙溫度和時間。
2.照片所見原來4杯分量分裝6杯,鬆餅體積因此較小。
3.小鬆餅質感滿像嘉頓孖寶蛋糕。如不喜此質感,可改用同等份量低筋或中筋麵粉取代自發粉,另加1/4茶匙泡打粉。
4.雲呢拿香油可加可不加(採用雲呢拿籽更佳),純粹添香。
5.以牛奶代淡忌廉無妨。
