片狀酥皮Puff Sheet(開四) 3片
蘋果(切粒) 1個
糖薑/薑 2湯匙
原糖(Demerara Sugar) 1湯匙
黃梅果醬(Apricot Jam) 2湯匙
黑芝麻(炒香、盅碎) 2湯匙
椰蓉 1湯匙
肉桂粉(Cinnamon) 1/4茶匙
麵粉 1湯匙
溶牛油 1湯匙
灑面:
黑、白芝麻、蛋白
Method
1. 蘋果切粒,與糖薑、原糖及黃梅果醬拌勻。
2. 將溶牛油與麵粉略炒,離火加入黑芝麻碎、椰茸、肉桂粉及蘋果粒。
3. 把一片酥皮切開4個正方形,中央放一堆長形蘋果餡,對角接成三角形。
4. 三角酥面上掃蛋白,灑黑、白芝麻,入預熱200oC焗爐,焗約18分鐘,即成。
