(一)枚肉四兩
(二)粉絲一小梱約一兩
(三)青紅椒各一個剁幼粒
(四)蔥切粒一湯羹
(五)熟油一湯羹炒枚肉用
(六)油鑊
Seasoning
枚肉調味:
(一)生抽一茶匙
(二)老抽1/2 茶匙
(三)糖1/6 茶匙
(四)生粉二茶匙
(五)熟油二茶匙
(六)麻油二滴
露汁:
(一)上湯2/3 杯
(二)老抽一湯羹
(三)生粉2/3 茶匙
(四)熟油1/2 湯羹
(五)麻油二滴
Method
(一)枚肉剁爛後加入調味,大力攪透備用。
(二)將油鑊燒熱,見有煙冒出時,即投入粉絲炸至鬆化,撈起放碟上。
(三)油一湯羹燒熱,倒入蔥花、青紅椒粒,再加枚肉炒勻,即將露汁之上湯、老抽及生粉混合倒入肉茸內煮成濃肉汁,最後加熟油及麻油。
(四)上桌時肉汁可倒於粉絲之上,拌勻進食。
