Ingredient and Portion
日本南瓜 半個
洋蔥 半個
蕃茄 1個
蟹鉗 10隻
牛油 2湯匙
忌廉 20ml
雞湯 500-700ml
Method
1. 蟹鉗洗淨,蒸10分鐘,然後起肉備用
2. 南瓜洗淨去皮、籽,再切成塊狀備用
3. 洋蔥、蕃茄洗淨去皮,再切成塊狀備用
4. 取一個湯鍋,加入2湯匙牛油,先放洋蔥爆香至微焦,加入蕃茄及南瓜,炒香
5. 加入清雞湯,先以大火煲滾,後以中至小火煮約30分鐘至軟
6. 熄火後待涼,然後倒入攪拌機中攪至幼滑
7. 幼滑南瓜湯倒入湯鍋,一邊加熱,一邊加入蟹肉
8. 加熱後,熄火再加入忌廉拌勻
Tips
加入忌廉後不要再煮至沸騰
