可用粗身飲管「喝」的果凍,味道近似西班牙國飲 Sangria 而取名。賣相嬌美,是招待朋友不錯的冰凍甜點~

2杯份量
紅酒 75毫升
蘋果汁 225毫升
檸檬汁 1湯匙
魚膠粉 5克 (1茶匙)
白砂糖 2湯匙
水果片 (蘋果、橙)適量
Method
1.混合紅酒、蘋果汁和檸檬汁。
2.取一湯匙與魚膠粉同放大碗內,置微波爐加熱30秒,取出馬上下白砂糖,用打蛋器拌至完全溶解。接著緩緩傾進餘下的混合果汁,邊傾邊拌勻。
3.溶液過篩倒入小杯內,放冰箱下層冷凍至凝固,取出輕輕插入水果片即可享用。
Tips
1.做甜點紅酒無需太貴的,用超市裡的餐酒就好。我用平常煮西餐的小瓶赤霞珠(187 ml),沒記錯的話「百記」、「惠記」減價後才十多二十元。喜歡酒味更濃者可以多下,反之亦然,總量維持三百毫升即可。
2.怕水果片「氧化」後賣相不佳,可以先浸檸檬汁一會兒。
3.此果凍「正常」凝固狀態傾向水狀。如希望口感帶韌性,魚膠粉得多下半至一茶匙。
