越式咖喱椰汁雞

Ingredient and Portion
雞翼 8隻
紅蘿蔔 1小個
洋蔥 半個
紅椒粉 4湯匙
咖喱粉 1小瓶
紫蘇或九層塔 適量
油蔥酥 4大匙(與紅椒粉等量)
椰漿或鮮奶 適量
Method
1. 先將雞翼去尾後,每隻切成3件。
2. 把紅椒粉、咖喱、蔥油酥等放入一起醃1小時,不
必加水。
3. 在鍋裡放油,開小火炒洋蔥及醃過的雞翼後撈起,把炒好的料在砂鍋中放入水,水量剛好蓋過雞翼即可,以小火燉15分鐘。
4. 加入紅蘿蔔,開大火燉15分鐘後,加入椰漿。(不喜歡椰味可以牛奶代替)
5. 繼續燉煮,煮好後放入紫蘇或九層塔即成。
