高筋麵粉 350克
牛油 21克
糖 21克
牛奶 35毫升
水 180毫升
乾酵母 5克
鹽 6.5克
Method
1. 高筋麵粉、糖、鹽及水溶乾酵母倒入碗內,加牛奶及水後攪勻。
2. 加牛油用力搓至不黏手,放在溫暖的地方發酵1小時。
3. 進行第1次發酵後,用手從50mm高處壓下,壓走麵糰內的空氣,再次將麵糰放在溫暖的地方發酵1小時。
4. 進行第2次發酵後,將麵糰放在電飯煲內1小時,反轉麵糰再煮1小時,然後再次反轉煮1小時,完成。
Tips
用手壓走麵糰內的空氣時,不可太大力。
