天使麵(Capellini) 250克
青意瓜(連皮、切幼絲) 1條
黃意瓜(連皮、切幼絲) 1條
蒜茸 1湯匙
橙甜椒(切粒) 1個
意番荽(Italian Parsley、切碎) 2湯匙
白芝麻(炒香) 2湯匙
Parmesan芝士碎 2湯匙
Seasoning
素汁:
牛油 1安士
乾蔥 4湯匙
乾番茄(切碎) 4湯匙
麵粉 1安士
素湯 14安士
Method
1. 素汁:溶牛油,炒乾蔥及乾番茄。離火推入麵粉,略炒後,慢慢加入素湯,待後調味。
2. 大煲滾水,加少許鹽,加入天使麵煮1分鐘後,用冰水沖凍待用。
3. 用粟米油炒香蒜茸,加青、黃意瓜絲及素汁,全拌勻。
4. 最後灑上橙甜椒、意番荽、白芝麻及芝士碎即成。
