魚腸焗蛋是順德經典手工小菜之一,這小小分享是龍小姐在順德家庭長大的家常煮法。

鯇魚腸 四副
蛋 五隻
油炸鬼 半條
蔥粒 少許
芫茜碎 少許
Seasoning
魚露 兩茶匙
白胡椒粉 一湯匙
紹興酒 少許
麻油 少許
鹽及生粉(清潔魚腸用) 少許
Method
(1) 把整副魚腸處理得完全清潔:先用剪刀清除所有肥油,再用剪刀剪開條魚腸,用鹽及生粉「省」及沖水(重複數次直至潔白)。再把魚腸切段,與魚膶放入大滾水飛水一分鐘後待用。
(1) 先打蛋,加入魚露、白胡椒粉、紹興酒、少許麻油及蔥粒。
(2) 把4/5蛋汁倒入瓦砵,放入已洗好的魚腸魚膶,再鋪上已切片的油炸鬼,大火蒸十五分鐘。
(3) 蒸完取出來立即倒入剩下的1/5蛋汁在砵上,放入已預熱200度的焗爐內焗約五至六分鐘,直至表面呈現金黃色。
(4) 焗好放芫茜碎上面,即可上枱了。
Tips
買鯇魚腸:去大檔的鯇魚檔一定有,因為佢地日日劏成百條鯇魚,魚腸就當垃圾唔要,所以不用叫他們留起了。而且好多時去相熟的檔口,有時他們會免費送贈,即使收錢都係$5一大袋。
