Ingredient and Portion
冰糖 40克(按個人喜好)
熱水 100毫升
魚膠粉 20克
凍水 100毫升
椰漿 400毫升
淡奶 100毫升
芒果餡材料:
芒果蓉 45克
糖 5克
水 40克
澄麵 5克
Method
1.將芒果蓉加糖最細火煮溶,澄麵加水攪勻,加入芒果蓉煮滾,放涼。注入冰球模入,放入冰格雪硬。
2.用熱水先將冰糖溶化成糖水,加入椰漿、淡奶攪勻。
3.魚膠粉混入凍水整成魚膠水再番熱,耐心攪至完全溶化(因為熱水落魚膠粉會起粒粒),再倒入已攪好的椰汁中攪勻,平均倒入每半個蛋殼中雪至半凝固,再放一粒芒果粒,之後合埋另半個蛋殼(個頂有個窿位)。由窿位注入椰漿.放回雪櫃雪至四小時.
