鹹蛋肉碎炒翠玉瓜

Ingredient and Portion
免治豬肉 100克
翠玉瓜 兩個
鹹蛋 2隻
乾蔥 一粒
Seasoning
生抽 1湯匙
老抽 1湯匙
糖 1茶匙
生粉 少許
雞粉 1茶匙
Method
1. 用調味料將免治豬肉略醃。
2. 翠玉瓜洗淨切片。
3. 鹹蛋洗淨,凍水下煮至熟透,除殼將之搗碎備用。
4. 先下少許油爆香切碎的乾蔥,再下豬肉碎以大火炒至轉色。
5. 下翠玉瓜及少量水,煮至稔身,將火收細。
6. 最後下鹹蛋碎兜勻,即可上碟。
Tips
1. 由於鹹蛋本身已有鹹味,故除醃肉外,不用另加調味料。
2. 下鹹蛋後整個菜式會比較杰身,如喜歡多汁,可續少加入水煮至喜歡的濃度。
