1.Add olive oil to pan, add garlic and onion until they are fried to golden colour.
2.Add tomatoes and basil, slightly crushed the tomatoes until the juice comes out, add in tomato sauce, let it simmer until it becomes a paste for use.
3.Use another pan to heat olive oil, pan fry zucchini and eggplant until softened, add in the prepared tomato paste. Simmer the mixture for 10 to 12 minutes. Add in salt and pepper for seasoning.
4.Serves with rice or couscous.
