Deep fried glutinous dumplings with lotus paste

These sweet dimsums are crisp and light on the outside, yet the filling is melting soft. Best eaten fresh and hot, but be careful of the piping hot fillings!
Ingredient and Portion
lotuse root 1 catty
glutinous rice flour 2cups
lotus seed paste 1 cup
generous portion of oil
Seasoning
sugar 1/3cup
Method
Remove skin from lotus root and blend into paste. Combine with 1/3cup sugar and glutinous rice flour and knead into dough.
Divede dough into equal portions, shape into ball and press flat, then wrap in lotus paste fillings. Wrap it up and shape into ball again.
Heat oil in wok, deep fry dumplings in oil until golden brown and serve.
Tips
(一)選購蓮藕,要查看藕節的邊緣,如有長出藕苗,形狀恰似鸚哥嘴,必為粉藕,特別好吃;如無藕苗突出,則為生水藕。
