Although fried pork chops appear in many countries' cuisines, there is a slight difference in each and every differnet place. This one prepared in a fukien style differs even from other ways of frying pork chops in China in a way that it is slightly sweet.

Ingredient and Portion
Pork chops 650g
Seasoning
Marinade:
sugar 2tbsp
oil 1tbsp
chicken powder 1/4tsp

Frying batter:
egg white
cornstarch 1/2 cup combined with 1/4 tsp baking powder

Dipping sauce:
chekiang vinegar 6tbsp
sugar 4tbsp
minced garlic 1/2tbsp
Method
Cut ribs in to lengths of 1 1/2 inch long. Marinade with sugar overnight. drain away melted sugar when cooking. Add in oil and chicken powder and marinade for another 15 minutes.
Combine ingredients for dipping sauce.
Wipe ribs dry, dip in egg whites, the dip in cornstarch(combined with baking powder). Heat oil in wok, The fry pork ribs until golden brown in colour. Quickly combine pork ribs with dipping sauce. Mix well, then serve.
Tips
When frying pork ribs, it is best to turn low heat when putting in the ribs, then turn on medium heat. This will make the ribs crispy on the outside yet still moist and tender inside.
If preffered, serve dipping sauce on the side.
