Heat water in wok ( enough to cover whole of chicken). Bring water to the boil, add in salt, wine and oil.
Place chicken in the boiling water and let cook until it boils again. Turn to low heat and cook over low heat for 20-30 minutes.
Turn of heat, and let chicken rest in the salt water for another 30 minutes. Take out from wok and let cool.
Cut chicken into smaller pieces when cooled.
Using low heat, heat the honey in a pan. Add in light soya sauce and stir until well combined.
Add in chicken pieces, fry until well combined and serve.
