The soft and melting texture contrasts greatly with the crispy fried dried scallops. It requires only little ingredients, but both the main ingredients are easy to get.
Ingredient and Portion
taro 500g
dried scallops 80g, soaked until soft
Seasoning
salt 1tsp
pepper-pinch
Method
Remove taro peel, then shred into thick shreds. Mix taro shreds well with salt and pepper, the arrange them on plate, piling them.
Sprinkle with some water.
Steam taro shreds over high heat for about 15 minutes.
Break dried scallops into fine pieces, drain well, then shallow fry in very warm oil. Drain away excess oil. Let cool for a while. the place on steamed taro shreds and serve.
Tips
(一)荔芋要選輕身,芋身亦要起花紋為好。
