Tom Yum Goong in Thai means Spicy and Sour Prawns Soup.
This soup is good for the cold and it is also a very yummy starter dish (if you wish to adapt the West dinning habit)
Ingredient and Portion
8-10 medium size prawns
1 stem lemon glass (cut it in 3 equal lenghts and flaten it by using a flat face of a knife)
4 sliced galangal
1 shopped chili
2 kaffir leaves (tear them into pieces)
1 table spoon of lemon juice
1 tablespoon of fish sauce
1/2 tea spoon of sugar
25grm of Tom Yum paste (you can find it at Citisupper)
10 straw mushrooms
5 cherry tomatoes
2 shopped coriander stems (to garnish)
Seasoning
Lemon juice (for seasoning if you like it more sour)
Fish sauce (add it in alittle by little)
Chilli (chopped and added in if you like spicy)
Method
1.Heat the gas, put 500ml water in a pot, let it boil then add tom yum paste;stir it until it dissolved with the water
2.Add galangal, lemongrass, chilli and kaffir leaves, wait for 1-2 minutes until it relases the fragrant of the herbs.
3.Add the prawns and stir until they turn pink
4.Add mushrooms, seasoning sauce, sugar, lemon juice, fish sauce and wait for 2 minutes
5.Add cherry tomatoes before serving
Tips
1.Clean the prawns first, get rid of their shells and black lines on the back and at the front, using a small sharp knife to devine the paths.
2.Mushroom should be cut in halves if they're big
