一般家庭包餃子總會加上豬肉,今日我便剔開了這個重大配角
用上XO醬,多了一份惹味、少了一份肥膩,感覺喚然一新

Ingredient and Portion
1)鮮蝦 1斤(去殻備用)
2)大白菜 1斤
3)上海餃子皮 4両
4)蛋白 1隻
Seasoning
XO醬 適量
醬油 適量
Method
1)先將大白菜用熱水煮熟,水上加入少量海鹽,放涼後切碎,用手搓乾水份(備用)
2)鮮蝦去殻後,切溶成粒至膠狀、加入醬油、XO醬,醃上半小時以上(備用)
3)将放涼後之大白菜,加入蝦膠平均攪拌作餡
4)放在餃子皮上,以蛋白作封口
5)放入熱水煮約3-4分鐘便完成
Tips
個人喜歡不放湯原汁原味,不然亦可放入雞湯同吃
