Reading the new Hong Kong Michelin Guide for 2012 made me realised that, though I happen to concur with many of their new inclusions except perhaps on some of the Star Ratings, their impact on the local dining scene is such that there will always be shops which you feel are unfairly left out and not given justice! Without much transparency as to how they choose where to eat, or which shops they have or have not tried and didn't quite make it onto the guide - I think for certain shop own

Without much transparency as to how they choose where to eat, or which shops they have or have not tried and didn't quite make it onto the guide - I think for certain shop owners, they might just feel neglected indeed!

CHAR SIU RICE -
Take for example 金华烧腊面家 Kam Wah. Their Char Siu is famous for being different. It is cooked inside an enclosed roasting oven, it uses top quality meat and is tender and balanced. It is also different from most other shops, as this version comes with a laddle of a thick gravy spooned on top, which is quite similar in technique to Yung Kee's Roast Goose, 大埔东江鸡酒家's 盐焗鸡, or Tian Tian's Chicken Rice in Singapore.



This shop never fails to impress in the quality of the roasts and personally is better than many other shops out there on a consistent basis. Being endorsed by a Prestigious Guide is often a good thing for the businesses, but from a foodie's point of view, there will always be shops that are being left out without justice and might never get a mention! Until then...
