Regal palace is on the third floor of Regal Hong Kong Hotel (causeway bay). The décor is very model, the restaurant has a high ceiling, which matches with crystal chandeliers. Floor-to-ceiling windows offer unobstructed views of bustling Causeway Bay streets. The staffs were polite and helpful, perhaps gave diners too much privacy, diners were sometimes neglected because there weren’t enough staffs. Smoked Crispy Chicken with Chinese Tea Leaves (7/10)
This is my all time favourite; I have ordered the chicken every time I visited Regal Palace. The skin is crispy with a hint of Chinese leaves taste, and the chicken is very tender. The chicken goes very well with the pepper salt and vinegar, the taste was just sensational.
The grouper fillets were nicely poached, smooth and spongy. Then, the fillets were sautéed well with the fungus and asparagus. The dish was fairly seasoned, a very classic Cantonese dish.
The chicken broth was nicely cooked and the smoked Chinese bacon gave the broth more complexity and flavour. The garlic was deep fried and gave the dish a roasted flavour, and the spinach was nicely poached. Another classic nicely cooked Cantonese dish.
This was more fusion style. The eel was prepared in the Japanese way and mixed with the rest of ingredients to complete the fried rice. I like the innovation, but pearl rice instead of jasmine rice would have completed the dish. The rice was a wee be too moist. The flavour was very balance between sweetness and saltiness. I loved the Crab Roe to give the rice a bit of texture and crunchiness.
