Fine New Ramen Joint

New ramen joint at Tai Hang. 2 sessions per day (12:00 - 15:00 and 18:00 - 21:00), 50 bowls of ramen per session. Only 2 flavours to choose from, either 塩 ( しお )ラー or 醤油(しょうゆ). Arrived around 12:35 and I am already bowl number 48. Patrons behind left in disappointment. I ordered the 醤油(しょうゆ) ラーメン. I would say that it was fair. The noodle texture has just the right amount of springiness and chew, accompanied by a mixture of sous-vide pork loin and a thinly sliced ham. The broth was flavourful b
