We checked out Hide-chan - we were a bit doubtful after seeing the comments but since we didn't need to queue, we decided to give it a go.
The interior is pretty chic - perhaps something like a "Roppongi" style. There weren't too many people at the time so it was pretty comfortable. Most seats were counter seats.
The service was pretty good.
We ordered the Original Hataka Ramen and a Spicy Tsuke Ramen ("劳"面).
The Hataka ramen was pretty strong and a bit salty compared to Ippeian. Very thick with a lot of pork fat. One of the strongest ramen soup base I've ever tasted in Hong Kong. You could select how hard or soft you want the noodle to be. I chose medium and it came as medium. Recommneded if you like strong taste.
The Spicy Tsuke Ramen was pretty interesting. The sauce was a bit cold and had a lot of bonito powder, as well as big chunks of bonito inside. It tasted very much like the soup pack of an instant noodle though. Having said that, the spicy flavour was pretty complex. This is worth a try but make sure you ask the chef to really warm up the sauce (which is an available option when you order).
The gyoza was really good. Crispy and juicy. The sauce that accompanied it was also really tasty.
(P.S. One of the few places in Hong Kong that has washlet! )
