Themed with Noh, a traditional Japanese dance-drama, the underground mixology bar 【𝐆 𝐢 𝐬 𝐡 𝐢 𝐤 𝐢 𝐋 𝐨 𝐮 𝐧 𝐠 𝐞】permeates the mystic oriental vibes. From the dim lightings, cocktail and menu designs to Noh masks hanging as decors, it was really an immersive experience with the Japanese Noh Theatre culture!
In classical Japanese Noh dance-dramas, there are 3 verses: “Jo （序） ” with meaning close to an overture; “Ha （破）” similar to an interlude ; lastly “Kyu （急)” being the climax. The 3 verses are symbolised with 3 paper fans as the menu, with 3 levels of alcohol contents, characters to be appearing in the 3 verses respectively.
My favourite was 【𝐅𝐮𝐝𝐨 不動】, which was served in a sake server holding burnt and smoking sakura wood. This brings an extra depth of smell during the tasting process, and I really fancy how the genmaicha is perfectly balanced with the whisky and rice vinegar, holding onto that floral flavour from the elderflower.
【𝐃𝐨𝐣𝐢 童子】was made out of homemade tomato consommé, and mixed with Copenhagen Long Pepper Aquavit, caviar and other spices. It really brings up the unique complex savoury flavour, really surprising from a crystal-clear cocktail.
