好耐冇嚟過,今晚又嚟試吓季節懷石 ($1380) 先利用打大量士多啤梨製造嘅分子料理,配合愛媛縣嘅無花果、北海道白粟米。先品嚐到士多啤梨嘅香甜,之後就係好似啫喱嘅無花果及非常清甜嘅白粟米跟住就送上一幅非常靚嘅夏日畫,靚到唔記得咗自己係嚟食飯。分別有夕張蜜瓜parma ham脆鬆餅、紫薯百合果凍、明太子脆北海道黃粟米粒、紀州南高梅。紫薯百合果凍非常特別,既有薯蓉口感又有jelly口感;南高梅又一啲都唔酸㗎喎!以夏日海洋為主題,配合3款刺身,分別係北海道帶子、太刀魚及愛魚女。北海道帶子加咗青檸汁及岩鹽,份外清新。另外兩種就咁加wasabi已經好有鮮味西班牙紅蝦蒸蛋,上面嘅泡沫係用咗好多種嘅魚煮出嚟嘅,蒸蛋非常滑溜,蝦肉鮮甜之後係來自日本嘅鱈魚乾及烏魚子,食完之後店員會幫我哋打開碗蓋,入面係用好多蝦去煮嘅湯,仲有一塊烏賊丸及日本炸稻米。食落就好似魚蛋咁彈牙,湯都好清甜脆皮雲吞係用日本春卷皮再風乾,入面有好多用酸汁做嘅啫喱,仲有一絲絲嘅日本毛蟹肉;估唔到旁邊嘅隻小蟹有好多膏!再食埋日本粟米蓉,好甜!金黃色嘅魚鱗好靚,肉質嫩滑,就算唔加自家製醬汁一樣咁好味;店員提醒要用刀叉切開2條蘆筍,因為大廚
