有別於普通嘅片皮鴨,北京烤鴨係連皮加肉一齊食,肥瘦度適中,咬落好Juice,上枱嘅時候仲係熱辣辣,佢仲有唔同嘅醬汁,特別有一款係酸酸甜甜嘅,個麵粉皮整得幾好,好薄身,每層都格有一張紙,方便拎。特別一講係啲配菜可以添加,唔會好乾身。另外叫咗松子魚,有啲失望,條魚比較細條,覺得個皮炸得厚,粉多肉少,但個醬汁都叫補救到。砂鍋雲吞雞,值得推薦,個湯底真係幾有雞湯味,啲雞仲好滑,材料多,口感好豐富,雲吞好滑好足餡料。

的片皮鴨就剛剛相反,肉比皮多很多,就好似燒味店的燒鵝一樣。不過
【古琴雅苑】
的片法,筆者不太欣賞。因為皮少就即是皮下脂肪少了,油香也同樣減少。肉多了,鴨肉又本身比較嚡口又乾身,因此口感變得又乾又嚡。

眾所周知菜名中雖然有螃蟹,但實際材料中並沒有蟹肉;「賽」的意思是有媲美的意思,賽螃蟹就是媲美螃蟹的意思。 正宗做法是用魚肉及蛋白做出像螃蟹般的味道及口感。

就換上帶子來做賽螃蟹,不過味道不似預期。首先,不知是否帶子好似出水令這個菜式變得太過濕潤。另外,帶子味道偏淡,質感也不及魚肉般做出蟹肉的細膩鮮甜效果。
