成日都話食中菜一定要夠多人先好食,結果一係唔食一食就要食最好😆今次走到嚟六國酒店食佢嘅中菜餐廳,聽聞佢哋有好多傳統手工菜式,我相信好多我都未食過🫢今次終於有機會大開肚界🤤🪐 大良野雞卷係一道傳統嘅順德特式小食,用上玫瑰露醃製嘅肥豬肉去做內餡🤤因為已經炸至酥脆,所以完全唔覺得肥膩,仲帶出啖啖臘腸香味,都幾過癮👍🏼§🪐 江南百花雞呢一味手工菜真係令我要寫個服字🤩將新鮮雞皮風乾超過6小時,釀入蝦膠之後就拎去炸🍤面頭係脆口嘅雞皮,蝦膠結實,口感同味道都有好多變化😋§🪐 懷舊鷓鴣粥雖然佢個名叫鷓鴣粥,但其實佢嘅狀態係羹😆加入蔘薯、雞肝等材料烹調而成😌整個湯羹都好有口感,味道清香,唔會太過濃味或者有味精感👍🏼§🪐 家鄉釀鯪魚又一道令我寫個服字嘅順德手功菜🤩喺依家市場競爭咁大嘅環境下,基本上都冇人會嘥時間做呢一類功夫菜🥲要將鯪魚煎皮拆骨,過程仲要好小心唔可以整爛塊魚皮😱將拆咗出嚟嘅魚肉打到起膠再釀返入皮!炸到金黃香脆,入口每一啖都好有味道👍🏼§🪐 台山焗蟹砵如果你有食過焗魚腸,呢一個蟹盤嘅情況就係類似!用上超大隻實肉嘅肉蟹🦀襯托住嘅係非常滑溜嘅蒸蛋🤤蟹肉嘅味道流入蒸蛋,令到佢整個味道都保持住蟹鮮😋
