朋友生日,想食日本嘢,之前來過lunch,今晚就試omakase,每人$700梅酒呢到嘅日本酒有好多款式,有特別純米、純米大吟釀、大吟釀、梅酒等,呢間餐廳仲有自製嘅梅酒,係由福岡小梅子釀製而成,同另一款梅酒溝埋一齊,甜甜哋,易入口,梅味比只得一款梅酒重豆腐芝麻沙律唔係一般餐廳咁細細碟,份量好多,豆腐係長野縣產,又滑又豆味濃,仲有芝士粒响入面,加埋芝麻醬,好開胃鮟鱇魚肝兩片鮟鱇魚肝,加少少蔥花同蟹籽,配上少少醬汁調味,入面即融,又好野味薄切目鯛配黑松露酸汁賣相好吸引,隻碟係手工做,好靚,刀工一流,每一片魚都晶瑩剔透,魚上有黑松露,旁邊伴上蔥花食嘅時候就將它們一同卷起,再點少少秘製酸醋、生蔥及黑松露,配合得好好,好平衡,又層次分明鵝肝多士喜歡食鵝肝,但係又知年紀大,唔可以食太多,呢到份量啱啱好,鵝肝煎至外脆內軟,無臊味,配上醋,沒有油膩感覺,食完再食埋伴碟嘅沙律菜,一流茄子田樂燒燒茄子,看似簡單,但看出心機和功夫,又炸又烤,外皮仲能夠保持深紫色,配赤麵豉醬,帶出茄子嘅清甜燒活鰻好多餐廳都係急凍鰻魚,其實新鮮嘅日本活鰻肉質嫩,仲有豐富嘅膠質,外皮薄,又燒得好脆,加少少鹽調味,鮮味非常突出朝鮮

牡丹蝦:大大隻,好鮮甜,又味道超鮮甜,爽口彈牙,仲有好多膏添
活赤貝:爽脆彈牙到爆,海水味道勁鮮甜
其餘嘅都十分新鮮,之前有朋友教過,食某些魚刺身要咬多幾口,等脂肪融响口中,帶出鮮味,今次試了,果然魚味更濃

一共有三款,水八爪魚、鰤魚同埋蟹肉蟹膏
水八爪魚:白雪雪,口感柔軟又嚼勁
鰤魚:點少少醬汁,鮮味提升,真係好鮮甜,仲油脂豐富,肉質彈牙添
蟹肉蟹膏:蟹肉、蟹膏及味噌撈勻,好juicy又嫩,味噌味道好配合,反而提斤千升了蟹肉嘅鮮味

一碟三款嘅甜品,有西柚、蕨餅同埋燒焦了
有機嘅西柚,色澤鮮紅,唔酸,仲好甜
蕨餅配手工芝麻,味道殅可以,不過硬咗少少
燒焦了,即係燒香蕉,外脆內軟,燒過嘅蕉仲好甜
