最近有位朋友介紹紅磡有間打冷菜館好好食,所以見今晚有時間就即刻揸車去試下,因為怕多人要排隊,所以就提早去食。菜館門口有煲仔飯煮梗,睇睇門口餐牌煲仔飯都有啲貴,不過再睇下個煲就明白哂,原來咁大個飯咁又真係唔叫貴。餐牌食物種類選擇有好多,有鹵水、小菜、粉麵、煲仔飯、 泡飯、湯羹、甚至連鮑參翅肚都有,真係花多眼亂。招牌鵝片拼盤 ($148) : 拼盤好豐富好大碟,成個小山丘咁,加埋鵝片都只係 $148 相當抵食,如果鹵水汁多返啲就更好喇。韭菜豬紅 ($55) : 份量超多,豬紅夠滑夠爽口,不過略嫌個汁唔夠濃味。鹹蛋黃金鮮魷 ($138) : 全晚最出色既一道菜,新鮮炸出黎熱辣辣,鹹蛋黃汁夠多夠濃味,而且鮮魷大大件,份量又多,重有印尼蝦片伴碟,十分有誠意。😋胡椒鹹菜豬肚湯 ($62) : 大兜又足料,三個人飲每人都飲到三碗 👍🏻 睇個款以為味道會好淡,估唔到辣辣地幾惹味。😋糖醋餅 : 朋友既至愛,不過朋友話整得麻麻地,唔夠鬆化同脆口,自己就覺得無咩特別似個普通炸麵餅咁,因為未食過所以做唔到比較。螄蚶 : 第一次食螄蚶,所以比唔到意見,不過自己鍾意食花甲、大蜆呢啲種類多啲。😝

新忠記潮州打冷菜館位於紅磡,是第一次幫襯,因為有朋友住附近。由於食飯之前已經開始飲酒,所以我哋都係叫一些送酒菜:分別叫咗馬友魚飯,鵝片滷水拼盤,椒絲腐乳唐生菜,以及蒜蓉炒豆苗。首先上枱係馬友魚飯,油分望落亦充足,上面放了幾片醃鹹的檸檬,作用應該是增加風味,但我懷疑是希望能夠辟走魚的泥味,可惜此舉不見成效,泥味仍然非常重,不喜歡👎另外的鵝片滷水拼盤,當然鵝片的份量不會太多,合共有五片吧!多少亦不是重點,重點在於滷水完全沒有純香陳的味道,我只食到豉油的鹹,對於一間潮州店來說,滷水汁是他的靈魂,我可以形容這個滷水拼盤的滷水汁非常失敗🤦🏻‍♂️反而兩個菜就出奇地出色,椒絲腐乳唐山菜的腐乳下得夠重手,炒工亦不錯,整碟菜食至最後也不會出水。而蒜蓉炒豆苗應該下了雞油或鵝油之類去炒,油分充足而味道亦很好,豆苗亦選用最嫩的部份,相信為這餐挽回不少分數就只靠這兩碟菜了。這可以說明廚房的炒料部門應該比較出色🤔

這間位於喺舊區嘅打冷店, 平時都相當人氣,最近可能疫情的關係,晚市時間並不多人。店內環境不大,但可容納的桌數還不算少。還有幾張卡位,適合兩至三個人坐,比較企理。客人不算太多,侍應招呼尚算周到,一坐下,就奉上熱茶。我哋只有兩個人,叫了三樣餸。鵝片拼大腸 $148 - 鵝肉香,有鵝味。大腸够入味,唔錯。話梅骨 $88 - 意外的好食,甜甜酸酸,排骨有炸過,好香酥,好入口,感覺女孩子會好喜歡這款啫啫芥蘭煲 $82 - 有蝦米、肉碎、蒜頭爆香,加上芥蘭爽脆,很香口。由於餸的份量頗多,兩個人也吃不完,最終留了三份二嘅「話梅骨」要攞走。紅磡食店頗多,各有特色。這一間老字號嘅打冷店,以抵食大碟取勝,味道也相對地出色。但是可能店內位置不大,去的那天,旁邊的大圓枱有八個人食飯,一邊飲啤酒一邊大聲交談,聲量頗大,其實很是影響店內其他食客的,可能這也算是打冷的文化了。埋單的時候大概是8:00 ,這是有很多人入嚟進食,也有不少是年輕的情侶,或者一大班年輕朋友,看來這裏,也頗受年輕一群的歡迎,味道和份量應該算是原因之一。

想點薄殼,無貨,轉叫螄蚶.

優點:
1, 滷水鵝片比想像中滑,由其係肥肉部位.
2, 蠔仔粥名就叫蠔仔,但蠔嘅size一D都唔細粒,蠔仔肉質嫩滑,蠔仔份量足無偷工減料,加入胡椒粉一齊入口係一絕!絕配.
3, 用蠔仔餅嘅制法整九肚魚係第一次食,九肚魚肉質比蠔更嫩滑,外表香脆內層軟滑而且唔油膩,唔需要點醬汁已經好好味.
4, 單憑炸蝦丸嘅外表,以為口感好實,但咬落卻相反,質感比較軟,又唔會過於彈牙,係自己中意嘅口感.
5, 其實.... 潮州螄蚶係第一次食,原來要用個特制鉗開螄蚶.

唔想煮,出街食,貪就腳就呢一間,以前寶石戲院轉角位已經成日幫襯。今晚叫了3樣野,蠔仔蛋、炒番薯苗同埋兩面黃。蠔仔蛋的蠔夠鮮味,餸飯一流,蠔仔又夠多,正﹗見好少食到番石榴苗,所以伙計話今晚有就即刻叫,如往常一樣好夠鑊氣,出街食就係要夠鑊氣。我自己好鍾意食兩面黃,不過印象之中唔係成日食得到,可能係要花功夫。最鍾意就係加上沙糖同埋醋的味道,真係好正。

今日去了紅磡打冷,兩個人,叫了鹵水拼盤和炒蕃薯苗。個炒蕃薯苗就正正常常啦,係多油少少,不過一般的小炒都是這樣的,d油好似唔洗錢咁。至於個鹵水拼盤,都係普普通通,咁你去食小炒都係咁架啦,普普通通正正常常咁,鹵水拼盤個鹵水汁就唔係唔好食,不過就肯定唔係好食,得個鹹字,無乜鹵水應有的香味。拼盤入面有紅腸、豬腩肉、鵝腸、豬大腸、豬耳、豆腐卜、墨魚同芽菜,佢D份量唔太平均,豬耳同豆腐卜得好少。整體而言D野好大碟,價錢平均都要$90至$100一碟。

今晚約了朋友一齊到新忠記食打冷,現在雖然是武漢肺炎防疫的日子,但我們也出來食打冷。鵝肉平時食打冷喜愛食鵝掌翼,今日要了個鵝肉,上枱見到鵝本身不是很大隻,也是較瘦的鵝,肉質較薄,但居然是下荘,底下用豆腐墊著,鵝除鵝肶外,雖然不是很多肉,但就很滑及很入味。椒絲腐乳通菜通菜一上枱見到已感覺通菜比較老,入口果然食到比較老及有渣,腐乳味不是很出,除有渣的外炒得都比較爽口。蠔仔肉碎粥喜愛食蠔仔粥,所以要了一鍋,原來一鍋份量都較多,夠3個人食,肉碎粥有很多芫茜及蔥,魷魚絲及蠔仔,可惜粥底較淡,蠔仔雖然細細隻,卻是很腍滑。

鵝肉
平時食打冷喜愛食鵝掌翼,今日要了個鵝肉,上枱見到鵝本身不是很大隻,也是較瘦的鵝,肉質較薄,但居然是下荘,底下用豆腐墊著,鵝除鵝肶外,雖然不是很多肉,但就很滑及很入味。

蠔仔肉碎粥
喜愛食蠔仔粥,所以要了一鍋,原來一鍋份量都較多,夠3個人食,肉碎粥有很多芫茜及蔥,魷魚絲及蠔仔,可惜粥底較淡,蠔仔雖然細細隻,卻是很腍滑。

來到新忠記晚餐,五個人叫了五個菜。養生六合時蔬:六合時蔬配有鮮百合,蜜糖豆,蓮藕片、雲耳、鮮淮山及馬蹄。材料頗新鮮,有鍋氣,不會成口油,但如果再少點油會更好。臘味油鴨脾煲仔飯: 十分大煲,最後要打包走。飯煮得剛好,軟硬適中,不會太乾或太濕。蠟肉味道正常,油鴨脾亦都不會太鹹,略嫌不夠油香。雙面黃: 亦即是糖醋麵。把麵炸到香脆再放上砂糖和醋。味道不過不失,不過不算抵食。侍應亦會向我地建議雙面黃的最佳食法。鵝肉拼盤拼豬腩肉:味道可以,不過鵝肉和腩肉都太多肥膏。炸蠔餅 ( 大):炸得十分脆,亦不會成口油。蠔的份量亦很足夠,份量比想像中多。如果5-6 人建議叫小蠔餅便足夠。如果一大班人聚餐,新忠記不失為一個好選擇,份量足味道又可以,而且服務態度亦比普通中菜館好。
