自八月初首次和食家見面後,八月尾再度首次參加開飯舉辦的活動!難道我這個宅人之命運已靜靜地起了革命?開飯網站已將此次無雙曲奇制作花絮大致上報告出來了.我想記錄一下此事,由自己角度出發,所以來個'不是食評'吧.今次這個無雙曲奇,我好老實可以說,孔志賢師傅是創作成功了.首先吸引我這個不愛好甜品又要減肥的人,當天試食又食,制作後又食,一小時吃足三塊無雙曲奇!!無辦法啦真是好好食~(自己都估不到!).怕甜的人,減肥的女士,來吧!一試這無雙曲奇.不時嚐點甜,人都開心甜(<--咩黎XDDDD)如果你問我無雙曲奇的味道是如何?(我複製返我自己所說的):"無雙曲奇餅皮好特別,第一下有餅乾脆口感,食落反而是麵包的軟綿綿,好得意.加上主力味道是我鐘意的濃香朱古力.雖然又蓮蓉又朱古力, 不過整體味道是孔師傅說到的少甜系!說到做到,這就是實力的証明吧. 今次這個無雙曲奇,我好老實可以說,孔志賢師傅是創作成功了

孔師傅教授用膠袋來混合整餅多項材料,這下夠真章!
真是好勁~雖然我好少機會會用到但總算學到這樣招式!雖則不環保但確實方便乾淨,重點是不會做到滿身都是材料碎!之前參加過一些整餅班都是用碗碗碟碟,身上沾滿麵粉離開是必然的.

他豪不介意分享'秘笈',除了提我們'膠袋法'可在家制甜品都用得上之外,更提到不用買貴貴的麵粉搓搓棒(我唔知碌木捧既正名XD),用普通水喉通便可以,當天我們就是用膠水喉通來壓平朱古力麵團啊.又輕又易上手,幾好用喎!


而且貴為總廚,不過他好有耐心地說明和示範,亦給予相當時間給我們制作,所以我好容易跟到,沒有出現甩BIT,出現困難. 而店方豪爽地給大家試食奶皇月餅和原盒包裝的無雙曲奇
,確實相當大方!更滿意的是提供樽裝水給我們邊飲邊送餅食,越細心的地方反而是奪得高份的重點.


不過自己制作的無雙曲奇是沒有初初提到的紅豆蓉餡,以及沒有金粉沾上.這是唯一失望,因為我鐘意食紅豆蓉多過蓮蓉.


今次可謂又食又拎,更學到廚師平時穿著的圍裙,又有靚靚日本制廚師帽戴下
有一刻覺得自己成為大廚呢.哈哈哈.(白痴!
)

不知道下次參加到這類制作派對會是幾時呢?

I think the Cakes and Pastries here are really great but it somehow seems neglected and overlooked in Hong Kong. Although recently I've eaten a lot of Fine Foods Cakes from opposite here - I believe some of the cake offerings here can be just as equally satisfying and worth a score upgrade, the last review also being mine! MILLE FEUILLE WITH RASPBERRIES - The multi-layered Puff Pastries are here are baked to about Brik Pastry consistency, the top finished with a glaze - its probably the close

I think the Cakes and Pastries here are really great but it somehow seems neglected and overlooked in Hong Kong. Although recently I've eaten a lot of Fine Foods Cakes from opposite here - I believe some of the cake offerings here can be just as equally satisfying and worth a score upgrade, the last review also being mine!


MILLE FEUILLE WITH RASPBERRIES -
The multi-layered Puff Pastries are here are baked to about Brik Pastry consistency, the top finished with a glaze - its probably the closest to my excellent experience at CAPRICE. The cream within is perfect without being overly custardy nor sweet, the Raspberries on top were fittingly appropriate and looks pretty too. This is definitely easily one of the no.1 Mille Feuille's I'd had locally, but the Caprice's one was better slightly.
AMARYLIS (AMARYLLIS) -
Very similar to an 'Ispahan ' (sometimes available at Fine Foods and SIFT), this version consists of a sandwich of Meringues rather than Macarons. The middle is a vanilla custard cream which is really well done full of 'vanilla essence', the strawberries bodes well with the sweet meringue biscuits. Topped with really tasty roasted Hazelnut. Loved this dessert.
BLACK FOREST -
A wavey shaped chocolate coating with moist cherries, chocolates and kirsch liquor interior. It could do with a bit more alcohol taste in my opinion but otherwise, this is hard to fault.
CROISSANTS -
I can't find my photos anywhere but I should have at least 2 in my phone somewhere.
The croissants as I mentioned before months ago, are full of 'buttery goodness' and on multiple cross comparisons on the same day between it and others - it came out tops. Its actually better than the Robuchon version even if less flaky, but the Robuchon wins if you manage to get a freshly baked one.

AS SOME REVIEWER ALREADY MENTIONED BELOW - THE CAKES AND PASTRIES HERE GET A DISCOUNT AFTER 5:30PM - WITH 40% OFF. EXCLUDING MY CROISSANTS OF OTHER VISITS, THE ABOVE 3 CAKES ONLY COSTED ME $54.00. SURELY THIS IS AN INCREDIBLE BARGAIN. NOTE: COCO @ THE MIRA ALSO CARRIES A DISCOUNT AFTER AROUND 7PM.

The cakes here are really pretty - whether its the varietie's of cake slices (not dissimilar to the Beard Papa ones) or the bigger cakes. Its the type that isn't overly artistic like but its the more homely type that you just want to devour and eat and eat and eat. Kool Deli definitely has the best Croissants in Hong Kong.
They're better than Joel Robuchon's Salon ones in my honest opinion - as the Robuchon ones have too many thin layers and are overly flaky and despite the hype, the latter doesn't have as much buttery taste as it should. The Robuchon's flaky nature also makes it no longer like a croissant, as the surface becomes too crunchy and its clumsy to eat it - it starts breaking up onto the table and you certainly can't dip it into your Cafe Au Lait, it also makes one want to cough when eating.

The croissants here are very unique and rare in HK - they're probably too small, but very well layered, somewhere between a normal HK defrozed then baked croissants and the Robuchon ones. Very well layered and fluffy just like the best hand made ones in France, with a great buttery taste. The keyword is fluffy and taste!, but not flaky like the Robuchon ones with too many layers - which is why as much as I admire Robuchon's croissants, I like the ones here and also the Mandarin Oriental Cake Shop's croissants better.

Croissants = 4.5 out of 5

Cakes = 3.5 out of 5

在Sangrila飲宴前...先溜出去吃點甜點滿足自已第一選擇當然是Fine Foods..可能始終時間夜了點~6點了~沒有太多有興趣的款式~沒想到deli kool的有很多款式!!而且好多都好吸引~心大心細諗緊邊2件好~~姐姐就話依家5點半後會有6折~$18 @ only..即刻決定到邊3件好~haha先食crumbled chocolate cake~仲以為面頭是一粒提子~是choco ball~choco moouse + 脆脆底~好味!再來~紅莓拿破崙~~~多過33層~~超鬆化~真係不錯~至少帝苑同mimosa ge都點叉都叉唔開~但呢度可以~5:30pm後特價對拿破崙來說應該是最沒好處~因為畢竟pastry會較其他moouse/cheese based cake易受影響~但幸好這次的拿破崙也不錯Tiramisu~~~~~~難免會同帝苑的比較coffee味很濃很濃的~~小比差點受不了~(因為個人唔鍾意coffee而已)但比帝苑的做得更好~cheese 味出少少~距離上菜起碼仲有3個鐘~~~我諗對小比都可以全無影響力呀呢幾件~好彩無浪費quota!
