鼎爺私房菜是一家位於灣仔的高級中菜館,以前開過幾間分店,但現在只有這一間總店。我和朋友上年冬天來到這裡吃晚餐。早前過來拜訪的時候,曾經也碰見過餐廳的創辦人鼎爺。餐廳裝修風格明亮簡潔,提供包房廂房服務,另外亦有一些密封包裝的秘方小食可以買走。餐廳職員的態度一般正常,只是不過不失。他們沒有讓我感到很不舒服,每一道菜也有介紹一下,但感覺有點太hardsell,過分機會主義。另外值得一提的是洗手間,裝修雖然不算非常高級,但有提供一些譬如棉花棒、牙線等等給客人整理儀容,我非常欣賞。我們點了多道菜式的set dinner。第一道菜是橙香冰鎮南非鮮鮑魚,清爽美味,鮑魚口感剛剛好不太靭,咬落多汁,非常開胃。接下來是花膠去骨鵝掌燴鮑汁手工柚皮,柚子皮食材雖然並不名貴,但是準備卻很花功夫,這裏做得很入味,花膠和去骨鵝掌口感豐富不油膩。阿爺三蛇羹是鼎爺私房菜的招牌菜之一,聽說是有三種蛇的蛇肉加配方烹煮而成。本人每逢冬天都會吃蛇羹,覺得這裏的蛇羹比起傳統的蛇羹專門店的並不遜色。不過當然高級雅座座位更加舒服。月滿抱佳人(XO醬炒蝦球帶子,香酥花竹釀百花)是創新菜式,蝦球和帶子的口感十分爽口彈牙,搭配上香酥的花竹和釀蝦膠(百花),整道菜很有層次。豉香欖角骨是一道傳統菜式,也是這裏的招牌菜。欖角骨肉質鮮嫩,豉香味濃郁,非常適合喜歡傳統菜式的人品嚐,不過本人就覺得略嫌肥膩。臘味炒芥蘭是一道比較簡單的菜式,不過這裏做得略為稍為鹹一些。鼎爺私房菜的另一道招牌菜是慢煮陳皮乳鴿,這道菜肉質嫩滑,搭配上陳皮的香氣,味道非常清新特別。不過本身習慣了外面的脆皮乳鴿的人,可能會覺得少了一點油份。桂花黃金元貝炒飯是最後一道主菜,米飯的口感軟糯,搭配上鮮美的元貝,味道非常好。這個set dinner份量實在不少,我們吃到最後也需要打包。我們最後也吃了生磨杏仁蛋白茶做甜品。杏仁茶磨得很細緻,加上蛋白口感十分嫩滑,甜品令這一餐加分數。 continue reading

唔怪得執尻晒,前台無服務員帶位,等7分鐘先有人,入到去已經點二人set, 半小時都未上到頭盤。星期五都已經得兩枱客,都仲話等咁耐。餸菜ok好味既,另外環境ok食完每碟菜又係等5分鐘後先有人收碟,呢個價錢呢d service 自行判斷 continue reading

早前老媽子大人生日,佢指定中餐,所以就訂咗呢間餐廳。兩個人消費$3000有找,值唔值得見仁見智啦,最緊要阿媽like. 餐牌可以睇相,個人覺得所有野都好,除咗隻🦀️瘦左D同埋食得有啲麻煩。其餘我最鍾意係鮑魚同隻慢煮嘅乳鴿,全部好入味而且調味好特別。個湯都係我媽咪嘅favorite。服務亦好專業,好有心機逐碟介紹係用咩方法烹調,同埋點樣食先可以保證原汁原味。做得唔錯!地方唔太大,有三間房可以俾朋友聚會,個人覺得幾好嘅! continue reading

上個月同家人食完,今個月見鼎爺出秋冬必食的蛇羮,好想試下😋,所以藉口慶祝朋友生日🤭,再訂位食過。今日去到見到Full House,又安排左間房比我地,生日的朋友以為我特意安排有房🤣🤣多謝晒超有Faces🤣。食物好滿意,尤其是蛇羮,朋友居然食得出蛇肉是新鮮的并不是冰鲜,果然係有要求的貪吃人😋。食食下亞爺入來同大家打個招呼傾下計💯,今餐大家都好滿意。安排得超我預期,可能鼎爺私房菜會係我以後請客既飯堂😆 continue reading
