今日我與男友到上環四出覓食, 無意間找到這幢商業大廈, 原來也開了不少樓上餐廳, 我們看過幾間覺得這裏的環境及價錢比較合理, 所以就選了這裡.這裡地方都頗開揚, 放到七八張枱左右, 而且旁邊還有很多廚具供客人購買, 甚為特別. 店員介紹了一個法國青口, 他說是這裡必食, 就聽他的, 這道菜有別於一般的藍青口, WOW! 我們未見過這些那麽大隻的青口, 一啖咬落的時候, 完全感受到青口超級鮮嫩多汁, 好得!黑毛豬, 不負眾望, 肉質鮮嫩爽口, 多汁味美, 外皮煎得香脆, 只係略嫌太少了!炆牛肉, 用了出名傳熱快的生鐡鍋來煮, 肉汁濃厚, 用來DIP這裡的自家製的麵包簡直是絶配!這裡的自家製麵包夠鬆軟, 溫度夠, 而且牛油呢採用了奶味重的牛油, 好特別! 我鐘意!這裡的重點推介還是甜品, 拿破崙, 一刀切下, 你會聽到見到非常鬆化, CUSTARD及生果用料新鮮, 真的可以ENCORE!

公司的Lunch Meeting,來到離Office遠一點的Fusion Gourmet。這家既是餐廳、也有各式食材與餐具售賣的店子,雖然光線偏暗,但每張餐桌均較寬闊,坐落也挺舒服。座位或客人也不算多的餐廳,午餐卻提供11款的選擇。本來揀了較便宜的長通粉,奈何沒有三文魚之下轉了吃辣意大利麵,卻變了最貴的一個……意大利麵附有沙律一客,伴有梨片及香橙汁的鮮甜,開胃十足!辣意大利麵 $188其實不辣的意大利麵,入口彈牙,適中偏硬的口感較合我意。除了帶子及西班牙黑毛豬火腿外,還有大量的沙律菜與粟米芯及雜菌。爽口的帶子鮮味不俗,反之黑毛豬火腿卻比豬肉紙還來得硬一點,不討好。至於那些蔬菜,吃時味道挺清新。由自己及同事的午餐看來,都不乏沙律或其他蔬菜的蹤影,大概餐廳講求的是健康的飲食體驗吧。但這個價錢的意大利麵其實挺貴就是了。

來到甜品喇!聽說這間餐廳的napoleon非常出名,我呢個甜品控一定要試試!佢除了strawberry, 仲有mango同chestnut味嘅napoleon,我揀咗strawberry,果然名不虛傳,pastry的部分很鬆脆,custard同strawberry比例剛好,下次如果有機會再來一定要再食!
雖然呢餐都幾貴,但食得出食物係好新鮮,亦都好用心煮,所以係物有所值的。

I had Chili Spaghetti with Scallops, no worries, it is not spicy at all. The chili merely creates the aroma of spice that enhances the dish. And the scallops, look at the size!!! Its too good to be true.

My friend had Kurobuta Pork served with rice, the pork is Fusion Gourmet's signature dish. IT IS SUPER GOOD!!! The pork is marinated first, but it belongs more to the sweet side rather than salty. The texture is just right, chewy and made perfect. 3 big chunks and rice is the right portion of a person.

Brought by a friend to this place at the Pemberton (the whole building was full of eateries - must try them out later); this was a homely place which provided dine-in services as well as sale of high-end gourmet food. 
Not at all hungry after a buffet lunch, I ordered a seafood bouillabaisse and a bread basket to go with it. The former was very substantial with oysters, mussels, crabs, prawns, scallops and fish - a genuine melange of fresh "fruits de mer". The fish was slightly overcooked, but other ingredients were of good quality. The bread tasted like it came straight from the oven and was nice on its own or dipped in soup. We managed to finish the whole basket between us and still craved for desserts. Here praise must be given to the house signature strawberry millefeuille - very crispy and was a perfect match with the sweet and smooth custard. The mango mousse cake was immediately outshone by the millefeuille. 
The service was good and the staff attentive. Though the meal was slightly pricier than expected at $300 per head, this was an enjoyable repast.

要吃得健康,也要兼具味美。如果為求健康,而要吃極粗糙、又冇味的菜,我情願不吃罷了。Fusion Gourmet的老闆亦是大廚,完全看得出對烹飪滿有誠意,選料講究,烹調用心。是日惠顧午餐,點了魚(Catch of the day)和沙律。沙律新鮮,魚亦煎得恰到好處,健康和美味巧妙地共存。吃完午餐,又可再併一個下午。店內也有售賣食材,如牛扒、魚、蔬菜、麵包、牛油等,也兼賣少許造型美觀的餐具。有時我也會忍不住買一些,但不敢買肉和魚,因我只信大廚的功力一定比我高超,無謂讓我浪費靚食材。

In a bid to eat more healthily, I scoured OpenRice's "Western" restaurants in Sheung Wan thinking that something nearby must have something easy on the heart. I will say that it's overpriced. I've complained about this before but $30 for a can of soda is ridiculous. I never expect that someone's going to charge me four USD for ten cents of sugar water, but then BAM! it happens everywhere here, and it does absolutely nothing to foster goodwill, imo.

We wanted to try the bread, because we've been looking around for good bread in HK (my friends bake their own and I'm really jealous, but not so jealous as to become less lazy, or to become magically possessed of an oven). Still, it's $20 for three measly slices.

The bread we got was OK, but it didn't blow me away: a raisin thing-- sorry, but raisins belong in bread about as much as fish roe belongs on pizza-- only Hong Kong violates the natural law so flagrantly. Another was sundried tomato-- good enough, but I can't think of any real uses for sweet tomato bread. The French bread was the best, but similar to the supermarket stuff of my childhood.

I decided to order off the a la carte menu instead of the set lunch (only the good die young, as they say). I got the prawns and angel hair. I enjoyed the quantity and variety of vegetables in my pasta: sugar snap peas, baby corn, bell peppers, tomatoes, onions, mushrooms, asparagus, and more. The tomato sauce was a little bland, but on the other hand it wasn't greasy or sugary or bad in any obvious way.

I did think the angel hair was overcooked, so that the pasta experience was much more mushy than is desirable. The prawns were insanely jumbo, and while nothing special, were pretty meaty and nicely had the tails removed.

Overall, I'd get this again but it doesn't actually stack up to the shrimp and angel hair pasta I make in my own home, which is a bad sign because I'm hardly a star chef. The mushy pasta is really the Achilles' heel and but for that it would've been great. Merely good though: B

My wife got the set menu red snapper with orzo and tomato sauce. In many ways, it was just like the thing I ordered, but with snapper replacing the prawns and orzo replacing the angel hair. The tomato sauce was the same, as were the vegetables. Given the mix-and-match nature of the affair, my wife thought there was no real "theme" of the dish and while everything was good, it didn't really go together. She gives it a B/ B+.

On the whole I thought the place was good, and I can assert with certainty that we will be going back. Next time I'll skip the bread and soda for two ($80 all told) and maybe squeak away with a pricey-but-manageable lunch. Overall: B
Other Info. : They were way understaffed when we showed up. Plenty of tables, but our server was working so hard she forgot that we asked for the check. I've marked "service" a little low here but I really think it's the management that needs to keep a sufficient stock of employees.

友人推介的聚會地點 Fusion Gourmet 位於食肆林立的柏廷坊。柏廷坊打著上環新興食廈的旗號,於近年人氣急升。同一屋簷下還有 La Perola、Zero Doppola 等等有實力的意菜餐廳,而跟 Fusion Gourmet 出自同門的 Fusion on the 5th 也位於大廈的五樓。

Fusion Gourmet 跟一般西餐廳不同之處,是它既是私房菜小店,亦是一間雜貨店。形式上跟灣仔的 Divino Patio 和Giando 大同小異,都是將餐廳和雜貨店混而為一,唯一分別是Fusion Gourmet 已在多年前利用這個經營模式來進軍市場,可算是行內的開山始祖之一。

當晩一共點了三款沙律,當中以這款凱撒沙律最為普通。

材料以各式沙律菜、蕃茄和雞蛋為主,味道不過不失,但份量可以比較慷慨。

沙律之中以這款巴馬火腿火箭菜沙律最討好。菜式選用矝貴的火箭菜,值得特別加分。更欣賞的是煙韌無比的巴馬火腿,火腿的脂肪分佈甚佳,層次感因而更加豐富。

 香辣蕃茄汁大蝦天使麵 (3/5)
意粉醬汁吃不出香辣味,但蕃茄味頗濃,味道的調校總算不俗。

不過個人不太鍾情於天使麵,因為麵條相對較幼,在吸取醬汁精華方面的確一流,但是嚼勁卻始終稍為欠缺。

意大利飯的味道亦不欺場,飯本身比較軟腍,跟醬汁配搭不錯。海鮮如大蝦、青口和魷魚亦夠新鮮可口,只是調味跟之前的天使麵有點太過接近。

廚師選用了澳洲穀飼的和牛尾,肉質份外嫩滑,經過炆焗後入口即溶。醬汁以乾蔥、紅酒等等為主打,香氣四溢,令牛尾入口更覺香濃味美。

 總結

Fusion Gourmet 絶對是個不錯的聚會地點。環境清幽雅緻,甚有家的感覺。食物除用料講究,味道亦頗有住家feel。倘若份量可以適當地調整的話,抵食指數必定更高。

Fusion Gourmet 不是地鋪沒太多閒什人等,裝潢簡潔環境清靜。是一個下午茶的好地方,沒有cafe 的嘈吵 沒有侍應的趕客,感覺超休閒。一個和牛下午茶餐,大概$100 , 質量中等,湯味不俗,唯獨是最可惜的是牛不夠香軟。Fusion Gourmet 不單是餐廳更加是一家精肉店,供應來自世界各地的肉類,同時供應餐具及調味料發售。這類店有南美非常流行,餐廳官網稱自己為Bakery.Market.Bistro。肉櫃的位置與用餐位置不算太近,沒有生肉的味道。蔬菜櫃那邊亦很清潔,其次亦有不少餐酒。個人很喜歡的一處地方~

店內環境非常寬敞,大大張淺色的木檯,空間感十足。餐廳一部份是售賣凍肉、生果和一些乾貨,而用餐的位置大概有三十多個。

Daily Lunch Menu有十款選擇,價錢由$78至$148,除了Healthy Combo Set有齊湯、沙律和麵包之外,其他的都是要逐樣加錢。是日想吃三文魚,所以選了Penne with smoked salmon and cream cheese sauce with vegetables;鬆弛看中了這裡的鮮肉櫃,選了Striploin Steak,是經過150天Grain-fed的。另外加了一客三片三種口味的麵包,和一客湯。點湯之前其實有問過一位看似較高級的人士關於當天的餐湯是什麼,他支吾以對好像不太清楚之餘,查清楚之後的答覆也讓人感覺有點不舒服,笑容也失奉,實在影響到用餐的心情。

一客三片的麵包是用日本麵粉,每天新鮮焗制的,分別是Sundried Tomato、Brown Raisin & Walnut和French Baguette。上檯的時候還是微暖的,三款都是外脆內軟的,尤其是French Baguette,平常吃到的外層都是比較硬和靭,但這裡卻是脆脆的,很好吃。三款當中我最愛的是Brown Raisin & Walnut,麵包本身帶少許甜味,中間加入粒粒的果仁,頗有咬口,好吃得差點忍不住想追加。

餐湯是豆蓉湯,其實一開始沒有點的,因為我們都沒有特別喜愛豆,只是後來看到別人的餐好像有跟沙律,還以為沙律要另外加錢點的,所以詢問一下侍應,才發現每一個餐都會加一碗沙律的,然後不知為何不自覺的又多加了一個湯。豆蓉湯是淡紅色的,看起來有點像喳咋,裡面好像是有紅腰豆、眉豆等等,味道還不錯,沒想像中的杰。

跟餐的沙律上面有大大一塊parma ham,油脂分佈不算平均,看起來有點肥,不過味道還可以,帶點鹹香,跟餐送的也沒可能送一塊高質素的了。下面的沙律菜就一般,我覺得有點苦。

三文魚Penne的醬汁有點少,那個cream cheese sauce 不知到那裡去,幾乎看不到,幸好味道是足夠,只是不夠creamy。我當然prefer sauce多一點,至少會平均黏在Penne上。Smoked salmon 切成粒狀,煮成半生熟,不太吃得到煙燻的味道,和平常的冷盤煙三文魚不同。

鬆弛的Ribeye 看起來也很好吃,他點的是medium rare,中間的部份雖然熟了點,但肉味濃郁,肉質也沒有太老,而且帶有炭燒的香氣。外圍帶點肥膏的部份也很好吃,肉很嫰。

伴碟的蔬菜種類不少,有荷蘭豆、甘荀、雜菇、粟米芯等等;另外炸成薄薄脆脆的薯片也很香口。

其實當時已經飽了,不過看到甜品又不想放過,但櫃裡面的蛋糕都引不起我的興趣,最後我點了一份即叫即做的Signature dessert – Strawberry Napoleon。

賣相很吸引,三層酥皮和吉士醬疊得高高的,上面還灑了些酥皮碎和糖霜,店方還很細心的替我們在中間切開了一半,不過我們自己分到碟上的時候就倒下來。一眼就看到吉士醬的質素很高,未吃就已經能感受其幼滑細緻,吃下去當然同樣深得我心,吉士醬又香又滑而且又不太甜。酥皮層酥脆無比,滲出淡淡的牛油香,再配上吉士和不太酸的士多啤梨,真的好吃得不得了。

最後鬆弛要了一杯冰檸檬茶,不過他投訴杯子那麼大,只給三塊薄薄的檸檬有點吝嗇,茶味不錯,只是不夠檸檬味而已。

雖然每項東西都要加錢,但都是明碼實價,有時候不是每個人都需要餐湯和餐飲等等,不要就可以省回一筆。如果以一個full set來計算,其實不算便宜,但味道很不錯,特別是麵包和士多啤梨拿破崙,更加是亮點,以後每次去都一定要吃!
