重陽09五時多,見不用等位就來了吃tea。三文魚$3件當然必食幾件,但見『金三文魚』在promo中也試了一碟,店長說是北海道野生的。我和朋友吃完一件後都覺得要再order幾件,味道更濃天鮮,比普通三文魚好味得多!雖然個樣冇普通三文魚咁靚。見menu的cod liver and scallop的outlook很吸引(波波壽司),就order了一件,誰知它完全不圓,貨不對辦,有點失望。不過,味道也ok,帶子少少燒,都幾match with cod liver。想說這裡上菜都幾慢,連一碟枝豆也等了大約十分鐘,經催促後才來。最後睇戲都遲埋=.=

Recently in August I came to try it again, mainly to eat the PACIFIC SAURY or sometimes called MACKEREL PIKE (SANMA - 秋刀魚) and the in-season White Peach imported from Japan directly!

The Pacific Saury was surprisingly done really well for such a chain-store shop. It was quite fatty and fresh, the skin peeled back carefully and without any of its normally associated Fishiness nor Mushiness feeling. Obviously Air-Flown in quality. Roughly around $65 from memory for this smallish serving size, Pacific Saury is a very cheap but delectable fish in Japanese cuisine that's best in Late Summer or Early-Mid Autumn! More often than not though it can be very fishy!

The White Peaches were a bit plainer than expected.

The Urchins were also quite sweet and really bang for your buck, being a 馬糞 type.

The Otoro as usual was quite fatty but not enough, its also very thin. A bit disappointing.

Other stuff eaten include Crab Miso Soup, 安康魚肝, Kani Miso with Crab, etc, etc.

OVERALL : around a low '4'.

As expected - good things never last long, especially with chain stores.
For a few months, this branch did impress me.
However - despite the previously mentioned 2 chefs still working there, they're now no longer working as team mates and doing the same things on almost all nights.
Instantly, like I've already mentioned - the quality of the sushi drops so much, to an unacceptable level. For example, the rice might be of the wrong shape and texture, the grilled aburi sushi's are no longer done up nicely, etc. The fish to rice proportion also is wrong, or if in some cases, when special garnishes/sauces are put ontop of the sushi nigiri - these are no longer proportioned correctly to 'enhance' the flavour, instead, spoiling it.
Such is the problem with sushi making - that the chefs' skills are utmost important and can change the positive experience into a negative one, or vice versa.
The other problem that happens from time to time here - the fishes that aren't as popular with Hong Kong customers - can become 'bad' here in this small branch. I've had some very spoiled, over the use-by-date Saba Mackerels and as it becomes more and more busier, the service is become very rushed as all the waiters and chefs are hurrying. Even the smiles have disappeared since its newer opening times.

Nowadays, the only thing I would recommend in this shop are the Sashimi's, especially of the white fishes and the fresh, plane delivered shellfishes. Don't bother with the sushi's, unless it reverts back to the old situation.

This is now one of my regular dinner places, as its highyl affordable, not to mention this branch of Itacho is probably one of the best 板長 or 板前 in HK. In fact on the good day, this is better than 鮨広. On a bad day however, it can still be underwhelming.
What is there to look out for - you ask? From my experience of eating here regularly, I find that the quality can vary a lot but if you happen to be there when the 2 Black Clothed sushi chefs (1 Hong Kong, 1 Japanese called 神力さん) , plus you sit on the counter right infront of them - far out, your experience will be as good as the top sushi shops in HK. The 2 well experienced sushi chefs make the rice perfectly for the sushi nigiri, plus the fish cutting is accurate and as I said, better and more consistent than even Sushi Hiro (TST or CWB).
On 1 occasion, I sat on the counter and the Japanese chef was there but minus the HK black clothed chef - the sushi that came out had irregular and incorrectly proportioned rice, which really deducted many points. Or on some occasions, the guy doing the flame grilled 'Aburi' sushi does not have good skills.
Overall speaking, however, this branch of Itacho is way better than some other ones I've tried. The fish is usually quite fresh and the Japanese chef puts the right confidemtns/garnishes to go with the fish.
The Toro quality however can vary by a lot. On the last occasion, the Blue Fin Chu-toro was nearly Ootoro quality and melts in the mouth. On some occasions however, the chu-toro is tough, not fatty and not worth the price.
Its nearly a given than in HK, consistency of the good quality can vary by a lot, given than HK chefs do not pay attention to the smallest details like Japanese local chefs - although the battling average here at this particular branch of Itacho is good enough for me to risk eating here more than twice a week, plus now I know exactly what to expect when seeing which chefs are working there and where to sit.
Can't wait to go there again! Much much much better than CWB's Itamae, which used to be my favourite.
Score: From 40% to 88%, depending on day.

Went to this particular branch recently for some cheap and mid-range sushi.Note that this place is not a Kaiten Sushi Train style one and also one can order by the Piece.Usually, I'm not a big fan of 板前 and 板長, especially when they have crappy local sushi chefs after over-expanding, unlike in the past. A few nights ago, I had one of the best 板長 experiences I had.
Was sitting infront of a Japanese chef as well as a more senior local sushi chef, they really did add wonders to the quality. The rice was not overly seasoned, the execution, temperature, taste, texture were all spot on and as good as the better sushi shops in HK.
A lot of fishes and whelks were really fresh, especially the 池魚 and 池魚王. The flame-grilled Aburi sushis were also done quite well tonight. The Blue Fin Tuna Akami however was the only let down as it had oxidised slightly at the edges, and they ran out of the Toros for the Blue Fin ones.
This experience was 85/100.

Having said that, if it reverts back to normal standards, it'll probably be closer to around 55-70/100.

好耐都無寫食評...看看上一篇已差不多1年前,全因自己懶!今日"戚"起條"根"寫番篇食評。約一星期前經過板長見到"海嘯價"三文魚壽司"3蚊件",咪同"蝦子餅"去試試!之前食過3,4次,OK嫁!魚生頗新鮮,他的姜很"脆口"嘩嘩嘩!"海嘯"三文魚足足令我等左45分鐘,對我講真係史無前例。點之..."海嘯"三文魚還OK但那些正價兼略貴的如帶子,秋刀魚,海老...舊飯一夾即"散"連D姜都"淋 Pat Pat" 我諗又排都唔會去住!

差不多九點路過吉之島,見無咩人排隊,行過去問吓有無位,果然唔使等就有位,兩個人order咗壽司同蒸蛋。壽司: 蔥花吞拿魚蓉(紫菜很"趣")、油金魚腩、鱆紅魚腩、燒鰻魚(熱熱地很好味)、海膽、醋青魚、三文魚 (特價3蚊,質同量都唔差)、帶子(很新鮮)至於蒸蛋正如其他食客話,奇奇怪怪咁。個蒸蛋入面有隻蝦、冬菇、日式魚蛋等,但食落無咩蛋味,似食豆腐多d,而且比較稀。整體比x氣好食,一試無防。但若然要等好耐先食到,咁就無謂。
