黑松露花膠筒~
含大量膠質的花膠除養顏外,聽說補肝腎的效果也甚佳,那不止是女士恩物,男士們也很啱吃呀。

首嚐黑松露與花膠的配搭,一中一西、卻全沒違和感,稠度恰好,煙韌軟滑;添加黑松露的芳香,相得益彰!唯一不滿便是一旁的白飯太少了點,醮不盡精華的汁液。

清蒸海三刀~
幾近絕跡的海三刀真是可遇不可求,今次有幸品嚐,也是多得總廚的面子;為何叫三刀?聽說因魚身較厚,清蒸時難以蒸熟,所以漁民都會在蒸魚前,在魚身𠝹上三刀,讓它受熱平均而得名。 魚味濃、油香鮮美,呈現海洋真味,確是難得一見的上品;在港想吃三刀,相信只能憑運氣及面子了。

今天和兩位舊同事來到灣仔午餐聚會,其中一位舊同事帶我們來到此私房菜餐館。我認為樓上餐廳或私房菜質素比起商場或鋪面的餐廳更有保證,原因有二,一來是因為樓上餐廳或私房菜比起在鋪面的餐廳更需要口碑,回頭客和舊客介紹新客是他們的主要目標,所以他們更認真做好服務和味道,二來現時租金飛漲,樓上餐廳有較多資金投放於食材上。此私房菜必需先訂座,今天我們3人挑了午市商務套餐,每人$128,性價比極高,我們每人選擇了一味小菜,份量和用料十足,尤其是花膠海味豆腐煲。我們還挑了的九製陳皮咕嚕肉,酸甜度適中。在我們離開時,全場已滿座。

菠菜蕃茄草菇浸魚湯,湯奶白色又唔油,有味,是否魚湯令菠菜苗那麽滑!


紫米椰汁露,椰汁濃,唔太甜,西米入口溶化,不稠,但我個人喜歡名門腐竹薏米糖水,環境燈光這裏感覺好些,食中式,有中國藝術元素,增加美意及食慾,這裏又幅大字畫,合儂意,又一次升呢,又行咗條不歸路!

在等時,有個高大穿白色廚師走出來,一看,向佢叫“係你” “係你”,我好似儍婆咁,佢係餐廳主廚,幅相貼係餐廳內,鐘志強Jacky,他也驚奇有個顛人,他現在去街市預備晚市,,我說真有缘,雖然眼仔耷耷地,好少㕑師白淨滑皮膚,有事業型男士,特別靚仔!

又到一期一會好友聚會,朋友識飲識食,每次都帶我地食吾同既好野,今次就食中式私房菜。雖然係私房菜,但都可容納十多枱,多人仲可以包房。朋友一早order晒菜式,所以齊人就可上菜。幾碟前菜後就黎一人一隻乳鵨,餐廳很貼心準備了手套比客人用手食,一個字"爽"!乳鵨攞上手時仲係熱辣辣,而且皮脆肉滑,一路食仲一路有汁流出黎燒肉排也很味美,啖啖肉但吾會好多肥膏。最有驚喜係松露手絲雞,待應先原隻雞上比我地相機食先,之後先攞去手絲。雞肉非常嫩滑,食得出係新鮮雞,配上淡淡松露味很香很夾,果然係呢到必食之選甜品要咗流沙奶黃香煎堆仔同西瓜糕,前者又係即炸,食時熱到燙口,奶黃真的很"流沙", 過有些太甜,後者係用新鮮西瓜製成啫喱狀的糕點,很有清甜的西瓜香味,實在吾錯。雖然平均每人5百幾蚊有啲貴,但以食物質素來說绝對值得。

股市造好,世叔伯賺得盤滿缽滿請食飯,選址灣仔的御進私房菜,還是第一次來。網上一篇訪問是這樣說的:大廚是紅褲出身由低做起,後來進了利苑的木人巷鍛練。最終升到主廚,也曾於國金軒做過,不久後更當了唐宮小聚的中華地區品質總監。擁有高薪厚職,他卻要做自己的菜,所以開了這家「御進」。這樣一寫,難免令我有期待之心。菜單上有三款套餐,我們叫了海參和鮑魚套餐,價錢比出面有名氣的中菜廳便宜些。黑松露拌帶子頭盤是頭松露醬帶子,一上枱已有點失望。帶子軟嫩卻肉薄,味道被黑松露醬濃郁的氣味帶去,配著一旁單薄的沙律菜,整道頭盤的presentation都要扣分。私房招牌乳鴿幸好第二道有招牌的燒乳鴿,讓人回過神來。乳鴿比起平時看到的要大,新鮮炸好,還是燙手的。吃下去皮脆、肉汁豐富,相信在一般中菜館吃不到這樣的貨色。腿汁扣關東遼參、蠔皇扣日本38頭吉品鮑魚套餐最主要的分別之一在於這道主菜。遼參煮得軟稔,滑得連筷子也夾不穩,感覺滋潤。腿汁味道還可以,稍嫌單薄又欠點鮮香咸香。鮑魚相較海參,並不見得較好。雖說700多元的套餐不應期待什麼高級貨色,但基本的海腥味都沒有去除得乾淨,足以令人詬病。私房子薑欖豉醬蒸時令海鮮、醬焗銀鱈

黑松露拌帶子
頭盤是頭松露醬帶子,一上枱已有點失望。帶子軟嫩卻肉薄,味道被黑松露醬濃郁的氣味帶去,配著一旁單薄的沙律菜,整道頭盤的presentation都要扣分。

腿汁扣關東遼參、蠔皇扣日本38頭吉品鮑魚
套餐最主要的分別之一在於這道主菜。遼參煮得軟稔,滑得連筷子也夾不穩,感覺滋潤。腿汁味道還可以,稍嫌單薄又欠點鮮香咸香。

私房子薑欖豉醬蒸時令海鮮、醬焗銀鱈魚扒
我們其中三人點的是海參套餐,所以有這道鮮魚。但是一條魚是分享的,魚的體積不大,上檯時欠了點得體。子薑欖豉醬有特色,但魚鮮等級稍次,剛剛合格而已。銀鱈魚扒的話,很明顯是overcooked了點。外皮是烤得脆,但魚身不夠嫩滑,醬汁沒什麼特別,還不及大喜屋的西京燒好吃。

黑蒜花膠燉螺頭、招牌濃湯翅
雖然年紀對不上,但我對於中湯燉湯還是特別喜愛的。這盅黑蒜燉湯,開來一望像中藥般的顏色,但喝起來份外鮮甜。湯料下得足,精華全燉了出來,黑蒜更是提升甜味所在,最後整碗喝清光。反而濃湯翅的濃湯便不如其名,湯頭應該是用雞及豬骨熬的,但濃度不夠。

時令野菜、火瞳菊花菜
吃到這裡,其實已有七分飽,菜蔬的便草草吃過了事。先上了一大鍋有紫色湯汁的菜,賣相完全不行,略過。沒猜錯的話,菊花菜應該是椰菜,外觀滿分。

泡菜芝士年糕炒老虎蝦、紅咖哩龍蝦尾伴多士
最後還有兩道不能小看的重頭戲,看食評見很多人推薦炒年糕,的確做得不錯。首先泡菜味道不重,所以不會太辣。年糕和醬汁搭得好,蛋香足而年糕軟糯,還有點焦香。配合老虎蝦的鮮味和結實的蝦肉,這道值得推薦。紅咖哩則是特色不夠,只是龍蝦這食材在名義上把菜式的等級稍微提升。

私房甜品: 西瓜糕、陳皮雪糕
食私房菜其中一樣最令人高興的,就是能吃到出面少有的東西,剛好甜品兩款我也未曾試過,頗感有趣。西瓜糕的外型就是如名稱所說般,想不到連味道也是和平常吃的西瓜一模一樣,而味道很是清甜,我十分喜歡。陳皮的味道我是不吃的,不過單憑外表未能判斷,所以吃了一口才發現。雪糕暗暗地透出陳皮香,雖然不喜歡這味道,但卻有想再接著吃的衝動,不知不覺地已吃光。

終於吃畢全餐,給我的感覺是中中等等,有個別菜式值得推薦,但作為一個套餐,整體不是太值。如果各位朋友想來吃,我會建議以散叫形式來點些招牌菜。服務方面完全沒問題,侍應待客親切,照顧周到。環境格局像小酒樓,有點不上不下,餐廳如果能把整體弄得更高級一點,定位會更好。

It was a set menu on the night. The restaurant was full and was a bit noisy. The dishes were good, service was ok. Scallop with black truffle. Haven’t seen so many pigeons served together. It’s wise that they served it as a whole pigeon. It kept the juice/moisture inside until you eat it. Braised sea cucumber. The sea cucumber was cooked just right. We booked a private room two months ago after going there with colleagues. We definitely needed a room as it’s our annual re-union that everyone was so hyper. We laughed so much when trying to take selfie for 11 of us and learning to use a new app. In additional to their traditional delicious dishes of luxury ingredients, we ordered a vegan menu for two of the team. They looked pretty and tasted yummy.
