Upon arrival we were welcomed with freshly squeezed orange juice and a basket of absolutely devine pastries. I tried the croissant and the baguette, which were both very nice, but my top marks go to the "chocolate croissant", which was really fantastic. Upon arrival we were welcomed with freshly squeezed orange juice and a basket of absolutely devine pastries. The omelet at La Marmite comes with "frites" (the traditional French shoestring potatoe fries), done to a perfect golden crips, and with a very refreshing mix of green leaves in a light vinaigrette. A cafe latte with skimmed mild rounded off the meal. Add to this wonderful brunch the charming staff and the relaxing atmosphere and it's a perfect start of the day.

Came here to try their set lunch menu which according to my friend changes weekly.You have the option of two courses or three courses. My entree of mixed mushrooms and goat cheese on toast was a cold dish. The little glass jar contained a medley of mushrooms and pork pieces immersed in a tasty stock base, I was a bit skeptical of the contents, but luckily it tasted marvellous with the mushrooms being perfectly cooked. The toast was also really good, with the goat cheese being creamy and tart.

For mains I had the sea bass. Normally I don't order fish, but I had a strange craving for it this time and I'm glad I chose this dish as the fish was perfectly cooked with the meat falling away with a poke of the fork.

And for dessert a pistachio creme brulee. There was no blow torched toffee top, so it was more like a heavy mousse. It had a light pleasant pistachio aroma, but I could only take a few spoonfuls as it got too rich.

Down-to-earth French Bistrot style diners are suddenly all proliferating in HK all at the same time, and most of them within the Central or West end of Hong Kong island area! La Marmite is opened by the Aqua Group, which doesn't need any introduction, except that a lot of their restaurants seem to be aimed at either expats or tourists, even more so than King Parrot or Igor's restaurants!

Onglet Hanger Steak, served Medium Rare, was cooked very well and surprisingly well-marbled and tender for this cut of meat. The l'echalotte (onions) were overly sweet however and spoiled the overall flavour of the beef, to the extent I needed to keep piling on the low-grade salt onto the beef to balance it out! The sauteed scaled potatoes were way too oily for a French dish, I mean it's suppose to be different to say olive oil driven Mediterranean/Greek/Portuguese cuisine, isn't it? For some reason, this was also written on the menu as both a Bavatte (flank) and an Onglet (Hanger Steak), which is contradictory even though they're next of kins on the muscles chart! The beef was nice but the supporting garnitures were a bit of a failure in my opinion ~ 6/10

The vanilla ice-cream was nice, but the Calvados tasted a bit too bitter when infused into the transparent, yet not overly caramelised apple segments. The pastry beneath wasn't baked enough as it became soggy, flipping it over using the fork reveals an under-baked whitish centre. This upside-down tart really could have been better in both cooking and overall flavouring balance. OH, AND THIS ARRIVED VERY COLD!! ~ 4/10

OVERALL - I FIND THE RECIPES IN LA MARMITE TO BE VERY INTERESTING, AS IT IS MORE MODERNISED AND SPRUCED UP THAN EVEN SOME PARISIAN BISTRO'S, AND BORDERING ON BECOMING A FINE DINING DESTINATION... IT HAS A LOT OF POTENTIAL, BUT THE DISHES WEREN'T REALLY COOKED TO THE PERFECT DEGREE INTENDED AND COMPARED TO SAY "BISTRO BOUCHON FRANCAISE" - IT WAS QUITE CLEAR THAT THERE WASN'T MUCH PASSION PUT INTO THE FOOD OR DINING ATMOSPHERE FOR NOW...

Had lunch with my colleagues at La Marmite today. Enjoyed the delicious food there a lot - the 63°C Egg is a must eat, the Chicken Breast was very tender and tasty and the Paris Brest melts in your mouth! The set lunch was reasonably priced, somewhat more competitive than the other two newly opened French Bistros in Soho given the quality of food offered in La Marmite.I like the decor there too. The set lunch was reasonably priced, somewhat more competitive than the other two newly opened French Bistros in Soho given the quality of food offered in La Marmite.

I like the decor there too. It is very bright inside the restaurant during the daytime and the setting is very Parisian. The green colour reminds me of Laduree in Paris...

Special thanks to Joe, the manager of the restaurant, who has been taking care of our orders today. He's very friendly and he offered to take photos of us even before we asked.

Will definitely be back again!

奉勸各位男士不要帶女伴光顧這裡,因為總廚Renaud Marin真的帥得令一眾男士相形失色,更無話可說的是,他的廚藝更是非常出眾。當天所見,真的有女士找經理幫忙,請總廚出來合照呢!

哈哈!“秀色”固然“可餐”,但是身為饕客的我,關心的當然是菜式的水準啦!最先上桌的麵包,足以令我感受到餐廳的誠意。麵包是店子的自家出品,形狀有點像古希臘人的桂冠,熱度足以令牛油一抹即溶。焦脆金黃的外層一捏之下化成一桌的麵包碎,而內層則是既鬆軟又帶點鹹味和微酸的麵包肉。很慶幸用來塗麵包的,不是令人討厭的某品牌散裝牛油,而是分別有以鯷魚和蕃茄等多種配料特製的自家醬料和充滿乳脂香味的海鹽牛油。

作為前菜的Potted Smoke Salmon and Capers Rillette, Sour Dough Toast and Salad,同樣令人滿意。極之香脆的Sour Dough Toast,配上充滿鹹香又帶點鮮甜的Smoke Salmon醬,那細滑的魚肉醬和脆硬的Sour Dough Toast剛好形成強烈的對比。沙律菜非常清新,橄欖油又放得恰到好處。讚!

另一款前菜是Large Bourgogne Snails in Parsley Butter and Garlic Bread。這道菜因為太油,牛油味又過濃,所以難以討我歡心。不過吃得出蝸牛肉頗新鮮,而墊在蝸牛之下的蒜蓉麵包雖然很油,但卻很好吃。

這餐最精彩的菜式,可謂非這道Poached Silver Cod莫屬了。在一般西餐廳通常吃到煎或焗銀鱈魚,很多時經過烹調後,魚肉被煮得過火,以致吃起來有種乾和硬的感覺。此店用慢煮方式,把鱈魚煮得充滿肉汁,肉質幼滑晶瑩卻又富有彈性。最妙之處在於煮鱈魚時,以原本慢煮所得的魚汁,再加魚湯去煮時蔬。菜蔬的香味與魚湯混和之後,保留了後者的鮮甜,又不失前者的香味。妙極!

很少在西餐廳吃到Paris Brest和Rice Pudding這兩道甜點。據聞Paris Brest是1891 年首辦的Paris-Brest-Paris 單車賽,為車手補充體力而設計的甜點。圓形甜圈看來有點像Donut,吃後才知道原來是Puff。甜圈中間放了一層厚厚的榛子忌廉,本以為應該會很甜,卻發現原來是清甜而不膩,還有那香脆的杏仁片,叫人百吃不厭。

Rice Pudding看來有點像幼童吃的“糊仔”,雖然外表看來不及Paris Brest的吸引,但總算“清新可喜”,因為以焦糖煮成的開心果,不但豐富了口感,更帶來誘人的焦糖甜香,而特別調製的忌廉醬也清清甜甜,這道甜點委實不錯!

很想試試這裡的法式鵝肝焦糖燉蛋伴麥包多士及沙律,但當天早已售罄,下次必定再來試這道菜式!

There were several French chefs (all trained in Michelin-star reestaurants) busying themselves in the kitchen and producing some surprisingly unpretentious and good honest French fare as you would expect in France rather than Hong Kong. The steak tartare with frites was superb and the beaf steak onglet with shallots and sauteed potatoes that my dining buddy ate looked equally good (not that he would've offered to share it with me...grr...)

All the different food at other tables looked really yummy too, and judging by the speed at which it appeared into lip-smacking mouthes, I reckon it was just as good as what we had.
Being an aqua restaurant, I already raised my expectations for the dessert and of course, I was not disappointed: The "Paris-Best" wa just amazing! It's a choux pastry with flaked almonds and is nothing like anything I've ever had before. So light and simply wonderful. We also ordered the cheese - to share among us - and I was reallyl surprised at the intensity and exciting flavour of these cheeses. The chefs obviously know how to store and serve this "smelly gold", because it was at the perfect temperature and had the right texture and bite.
All in all, I must say that I'm really impressed with this restaurant and I can't wait to go back with my friends.
Also, I think the nice Paris bistrot type seating at the open street front is just so nice... It gives the whole place a real "neighbourhood" feel and makes the affair less formal. It invites you to just walk in and have one of your old favourite meals... And it's affordable too!
