I ordered the hand cut noodles in a mala broth with two options. The brisket was meaty, the tripe was thinly cut and nicely chewy. Not much tendon, looked more like braised fat. The peanut dressing really hit the spot too, crunchy and fresh and a lovely complement to the soft chewy noodles and mala broth. Perhaps needed more herb dressing but I’ll ask for more next time.
