說起來都有好一段日子沒吃鐵板燒了,其實在鐵路沿線,尤其是沙田打後,似乎都沒有令自己滿意的店子,相比之下位於帝都酒店的櫻田日本餐廳,可以屹立多年,沒真正實力,又何來固定客源,就算在北上成風的大氣候下,雖未至坐無虛席,但總算熱熱鬧鬧。近日餐廳主打《 佐賀A5和牛尚宴》,整個套餐原價$1,288,但優惠價是$888,今次就同朋友睇睇有乜好食!前菜Appetizers磯煮鮑魚 | 鮟鱇魚肝 | 沖繩水雲Isoyaki Abalone | Monkfish Liver | Okinawa Seaweed先以酸爽滑的沖繩水雲來清清味蕾,感覺真好。再來是刀功細膩,柔韌入味的磯煮鮑魚。然後是口感豐腴的鮟鱇魚肝,三者質感各有千秋。*******刺身 Sashimi送上了兩片肥美的大拖羅,有種入口即溶的感覺真好。*******溫物 Hot海之幸茶碗蒸Seafood Chawanmushi材料豐富,蛤蜊、雞肉、蝦仁及冬菇,雞蛋蒸得滑溜,小小的一碗,大大的滿足。********炸物 Fried山葵蟹餅Golden Wasabi Crab Cake色澤淡雅金黃,炸得毫不油膩,咬落有少許芥末的辛香,又有蟹肉的甜美,我鍾意。鍋煮銀鱈魚或芝味雪場蟹腳Sake-marinated Black Cod in Pot or Cheddar Teppanyaki Snow Crab Legs因為同朋友分享,所以兩款都點了。銀鱈魚極具視覺效果,小鍋放上牛油,把什菌及鱈魚煮熟,置底的海鹽澆上酒後點火,即時香氣瀰漫,湯底吸收了魚肉的鮮及牛油的香味,肉質嫩滑,水準極高。而朋友的鱈場蟹腳煎至微焦再蓋上芝士炙至焦香,蟹腳位已預先剪開,每芝士能溶入,非常細心,甜美的蟹肉與芝士味道契合,美妙。*******鐵板佐賀A5和牛厚燒或薄燒Teppanyaki Saga A5 Wagyu Thick Cut or Thin Cut整個套餐中的亮點,自己喜歡啖啖肉,當然是厚燒,友人愛蔥香,就選擇了薄燒。厚燒火喉是我最愛的medium rare,切開呈嫣紅色,帶少許血水,配上炸過的蒜片及芥末,增添口感及去除油膩感,肉質又鬆軟有嚼口,聽說下個季度會轉另一款更矜貴的日本牛肉,實在令人期待。而薄燒牛肉則伴以冬菇、露筍及南瓜片,蔥香及牛肉味在口腔中迸發,感覺真好。*******佐賀A5和牛黑松露炒飯Fried Rice with Saga A5 Beef and Black Truffle炒得乾身又香口,作為澱粉怪,對食材及廚師的專重就是秒殺整碗飯,對嗎?********味噌湯Miso Soup此刻喝上一碗熱燙的味噌湯真好。********自家製蜜桃果凍Home-made Peach Jelly毫不賣弄,平實的將蜜桃的甜美芳香展現。     continue reading

松阪牛的脂肪均勻、肉質軟嫩,被評為國寶級和牛,吃過的都會回味。這晚來到櫻田日本餐廳,可以細味主廚精心設計的一人前全牛套餐,由和牛刺身、煙燻、湯品、主菜、鐵板燒,以不同烹調方式突顯其嫩滑醇香,每款都讓人拍案叫絕。和牛肉眼刺身配黑魚籽薄荷芥末汁(3片),可直接嚐到和牛的細膩甘香,口感軟腍重油花,沾點薄荷芥末汁則有清爽甘味,清新怡人。煙燻大根半熟和牛西冷(3片),半熟和牛被濃郁木香包圍著,入口更為香軟,配以汁煮大根,淡雅而清甜。品嘗和牛套餐時,可以來個餐酒配對,以提昇整體味道與感覺呢﹗以砂壺裝載的牛清湯,吊湯5小時,清徹香醇,配以炸牛膏,令牛湯味道更濃郁醉人。主菜是和風汁燒牛柳蘆筍串,厚嫩的A5松阪牛,以備長炭燒至3至4成熟,加上少許甜鹹的和風醬汁,入口香氣馥郁,配搭幼嫩清爽的蘆筍,平衡油香同時更具層次感。同時,來杯專為鐵板燒而設的清酒配對。終於來到看大廚表演的鐵板燒環節,和牛肉眼厚燒或薄燒,厚燒約7成熟,那豐富的油脂入口即化,滿口濃厚鮮美。而薄燒除了和牛的爆油口感,也被濃香蔥蒜包圍著,各有千秋。再來是讓人看得治癒的金蒜和牛炒飯,把一碗白飯加入金蒜、雞蛋、和牛同炒,生炒得飯粒乾爽分明,每口盡是和牛精華,美味。就連甜品,也是主廚自家製抹茶銅鑼燒,口味清新淡雅,正好為剛才濃郁的和牛盛宴來個終結。 continue reading
