今年的聖誕節,男朋友預早在Twyst 訂了台一去到的時候,已經覺得餐廳氣氛很好地方不是說很大,大概廿張台左右吧老實說開初看到Menu 時,真的不懂選擇我們還是請侍應講解這兒特別的菜式,好過比自己亂點吧~我們選了一人4個couses 首先來了一個餐前小吃,挺好的然後是一道帶子沙律和蟹蓋我和男朋友都十分欣賞這兒的蟹蓋,煮得很出色再來是一個龍蝦濃湯,味道十分好,有好香濃既龍蝦味但或許湯真的太濃,我們都很想飲餐酒那兒是免開瓶費的,而我們卻沒帶酒來,最遺憾是這點但我們在餐前已點了餐飲,所以下次我們再去一定要帶上酒哦~!!頭盤是黑毛豬和和牛面豬done 哈!挺好吃的,肉質好滑最後點了兩款甜品 -- Twyst Souffle 和Bread & Butter Pudding 那個麵包布甸超讚好開心的一餐飯多謝男朋友給了我一個很快樂很滿足的聖誕Merry Christmas all~!!!!!!

今年的聖誕節,男朋友預早在Twyst 訂了台

一去到的時候,已經覺得餐廳氣氛很好


地方不是說很大,大概廿張台左右吧

老實說開初看到Menu 時,真的不懂選擇


我們還是請侍應講解這兒特別的菜式,好過比自己亂點吧~


我們選了一人4個couses

首先來了一個餐前小吃,挺好的


然後是一道帶子沙律和蟹蓋

我和男朋友都十分欣賞這兒的蟹蓋,煮得很出色

再來是一個龍蝦濃湯,味道十分好,有好香濃既龍蝦味

但或許湯真的太濃,我們都很想飲餐酒

那兒是免開瓶費的,而我們卻沒帶酒來,最遺憾是這點

但我們在餐前已點了餐飲,所以下次我們再去一定要帶上酒哦~!!

頭盤是黑毛豬和和牛面豬done

哈!挺好吃的,肉質好滑

最後點了兩款甜品 -- Twyst Souffle 和Bread & Butter Pudding

那個麵包布甸超讚

好開心的一餐飯

多謝男朋友給了我一個很快樂很滿足的聖誕

從未試過呢間,
都算唔錯;
不過如果係食 lunch,
我寧願去 Le Mieux Bistro,

兩邊 lunch 價錢差唔多,

差啲唔捨得食.
好欣賞它的配撘組合心思!
三文軟軟淋淋的口感,
似生還熟,
但偏向生!
Texture 全然與我至喜愛的 Slow Cook Salmon 不同.
是另一番的嘗試.

接着來的,
是第二道前菜:
Pan Fried Foie Gras wtih Grilled Apple & Toast, Raspberries Coulis
送到我跟前,
聞到那極之吸引的鵝盰香氣,
差點按捺不了,

不想拍照!
實在是漂亮.

美中不足的是:
(1)大厨分贓不均,
看到人家的鵝盰是我那份的打雙呵~

(2)鵝肝沒挑筋,
這功夫懶不得呵~


Sauteed Linguini with Crab Meat, Sicilian Sauce
味道唔錯,
不過不失的 Linguini...

遠方人家的是:
Char Grilled US Angus Rib Eye with Morel Coulis, Red Wine Reduction
試了一點這個 Medium - medium rare 的 Angus Rib Eye,
真的好出色!

而那個 Morel Coulis 更令我喜出望外!

味道係以黑松露為主的醬醬!
愛杀了!

前面的是我的主食:
Char Grilled US Kurobuta Pork with Apple & Rise Salsa
這個黑毛豬也不錯,

但我好似食到有點點"梳打粉"的味道???
Apple & Rose Salsa 的味道相對失色了,
我的黑毛豬都用了人家的 Morel Coulis 來焦着吃


Twyst Christmas Dessert Combo:
(1)Ice Lemon Souffle
不似一般的 Souffle.
這 Souffle 給我帶點 New York Cheese Cake 的質感.,
是實實在在的那種.
是讓人可以一啖一啖的吃,
一啖一啖的享受.
檸檬的酸,
檸檬的清新,
叫我愉快.


(2)Choco Truffle Log
算幾甜,
但亦同時讓人愛杀了的古力塊.
外層 coat 住的是帶微脆的焦糖類的 Truffle .
裡頭是濃意綿綿的古力!

第一道頭盤是慢煮三文魚配海膽,三文魚子,說過多次,三文魚我只喜歡慢煮和煙三文魚,Twyst的慢煮三文魚處理得宜,外熟內生,魚肉肥美,豐滿嫩滑,上面的海膽加魚子,目的是令到菜式的味道層次上,添上一點鹹香甘甜.碟上的麵豉醬加薑汁做出來的醬汁,可中和魚肉肥膩之妙.

二道頭盤是煎鵝肝,大多餐廳也有鵝肝吃,無須大驚小怪,所以想要突出,一定要做得比別人好.此鵝肝以燒過的蘋果,多士為伴,配Raspberry汁.照表面看也是沒甚特別,煎鵝肝不外乎也是配水果,加甜酸醬汁.這塊鵝肝份量不大,外表煎得不算特別脆,內裏則很嫩,味道甘香豐滿,底部的蘋果片爽甜多汁,再伴上酸甜的醬汁,減低鵝肝的膩,你我也知曉的道理.但是這個鵝肝,是有水準.

鵝肝之後便到蟹肉扁麵配西西里汁,所謂的西西里汁,是用上龍蝦去淆出來的醬汁,連同彈牙的扁麵吃,相得益彰,帶有龍蝦濃香味道的醬汁,將每條扁麵做得絲絲入扣,麵上的鮮甜蟹肉,已經變成大配角.

主菜二揀一,有安格斯牛扒與極黑豬兩者,近年在好些扒房吃過高質素牛扒,已對此類西餐廳的安格斯牛扒失去興趣,於是便要極黑豬扒,此極黑豬賣相精美,豬扒上舖了蘋果絲,外表有點像韓式生牛肉內的雪梨絲.豬肉的肉色帶點粉紅,如果是靚的極黑豬,吃落去是香甜帶爽,兼有肉汁.Twyst在此方面便差少少,此豬扒入口爽,但太乾,沒有肉汁.在豬扒上的蘋果絲,爽脆多汁,很醒胃.

全夜有紅,白酒供應,任飲不拘,沒有昔日星啤任喝之狂野,只有濃厚溫暖的節日氣氛,一輪交換禮物,抽獎遊戲,最佳打扮比賽之環節,無論得獎者,或者是在座之參加者,也應該樂在其中,過了高興之一夜.

同事帶我去一間餐廳,一間不錯的餐廳,差唔多一點都已經坐滿晒人,同事推介一個deluxe menu,安格斯牛扒不錯,所以我地都一齊揀d個menu!先來麵包配一個新鮮蕃茄souce,麵包帶少少香草味,仲係暖暖的,好fresh,好味!頭盤是煎鵝肝,樣子不錯,但質地略覺唔夠溶化,不過配咗一件該是煎過的蘋果片,令鵝肝無咁單調主菜的牛扒到啦,有薯角及雜菜粒伴碟,好欣賞個雜菜粒既伴菜,又似沙律咁好吸引,之後waiter手中拿著芥末問我地駛唔駛加,都幾細心,見到咁吸引當然立即開動,但係有少少失望,因件angus好"un"呀而且好難切,應該係有質感但唔應該咁"un".. 再黎甜品及茶,甜品好特別,炸雪糕外面個層係甜甜地,幾特別不過略有少少油(炸)味,裏面既曲奇雪糕就好好味

每個月都慶祝一番,似乎有點折騰,我也覺得背後的意義其實並不太大,但主要是…給我們一個絕好的機會大搓一通嘛好似這一次,就選了想吃很久了的Twyst。Lunch set價位在$128-$158之間,想吃好一點的,可以選$208的Deluxe lunch menu。我倆就個選其一,又加$50將lunch set中的Appetizer轉為Minnie大力推介的蟹蓋。意式香草包配蕃茄醬熱烘烘的香草包質感綿軟,嚼起來散發出陣陣麵粉香,蕃茄醬酸爽開胃,配麵包吃二者很夾。Crab meat Au Gratin TC不能吃蟹,這款前菜全數交給我處置,一個人獨吞一件真的很滿足!表面是焗得金黃半融的芝士,底下鋪滿厚厚飽滿的蟹肉,入口即有啖啖鮮美揮灑出來,配上淡淡的酒味與濃濃的芝香,每一口都是享受。但不足處是蟹肉拆得不夠乾淨利索,成個蟹蓋有兩三片細小的蟹殼混在其中。Pan fried foie gras with grilled figs, raspberries jus鵝肝大概是兩口的份量,我和TC固然是一人分一啖。鵝肝煎得外身微焦帶酥,內裡則油潤柔軟、脂香滿溢,傾落的油脂進入烘烤得脆身的多士後,哪有不好吃

意式香草包配蕃茄醬
熱烘烘的香草包質感綿軟,嚼起來散發出陣陣麵粉香,蕃茄醬酸爽開胃,配麵包吃二者很夾。

TC不能吃蟹,這款前菜全數交給我處置,一個人獨吞一件真的很滿足!表面是焗得金黃半融的芝士,底下鋪滿厚厚飽滿的蟹肉,入口即有啖啖鮮美揮灑出來,配上淡淡的酒味與濃濃的芝香,每一口都是享受。但不足處是蟹肉拆得不夠乾淨利索,成個蟹蓋有兩三片細小的蟹殼混在其中。

鵝肝大概是兩口的份量,我和TC固然是一人分一啖。鵝肝煎得外身微焦帶酥,內裡則油潤柔軟、脂香滿溢,傾落的油脂進入烘烤得脆身的多士後,哪有不好吃的理?不過鵝肝也非完美,至少我就吃到一條難纏的筋,當然有損整體的享受了。

蕃茄忌廉湯
第一次試到蕃茄忌廉湯,蕃茄的酸爽開胃恰好中和了忌廉的濃稠,令整碗湯清新醒胃;再者忌廉本身也落得適量,蕃茄味道又來得自然真實,令平日從不接受忌廉湯的我也喜歡上。
三文魚白露筍忌廉湯
雖然只看到幾小粒三文魚,但魚香被煮出來融入湯內,白露筍的清甜也得到體現,是較為清爽鮮美的一道。難得是日兩款都是忌廉湯,卻都不覺滯膩。

前面都滿意,可惜到了主菜就出婁子了…
Roasted Australian Leg of Lamb with Mixed Herbs
TC點名要吃得烤羊腿肉,可惜質素卻令人失望。羊腿肉是本身已經烤好的,而不是現整,侍應說是七成熟,可我覺得是well done了,羊肉死實,硬得咬不動,費好半天勁才能嚼爛一小片,唯一的優點是羊肉夠羶,符合我倆的胃口。另外這餐廳的刀也不怎麼好用,切得幾辛苦…
Grilled wild Indian king prawn with Basil Beurre
我的大蝦稍微好一點點,蝦肉飽滿彈牙,但大而無味。有的部位會連帶蝦膏,至少還吃得到蝦膏的鮮美濃郁,而淨蝦肉的部分,就真是乏味了。奶油汁也甚為寡味,缺少rosemary的那股醉人清香。

批評完主菜,最後的甜品算是交到功課。
Daily special desserts
咖啡慕斯、柚子慕斯和泡芙,其中最美味的是泡芙,外身有彈性,內裡則注入滿滿的奶油餡,奶香濃郁亦不油膩,只嫌一個太少;柚子慕斯雖然模樣平平,但味道卻不賴,有粒粒酸甜咬口的柚子肉;最平庸要屬咖啡慕斯,但也打得幼滑細膩,如加入酒香就會有tiramisu的風采了。
Deep fried Cookie & Cream ice cream
裡面是一大球HD的cookie & cream雪糕,外面是炸得酥脆香口、還微帶熱氣的crumbles,試想這樣的組合,不好吃的可能性和小行星撞地球差不多吧。
Coffee/tea
咖啡也香濃夠熱度,不過如果選latte/cappuccino之類的話還要加錢…

這一餐餐、前菜、餐湯和甜品其實都令人滿意,唯是主菜實在留下太大缺憾。另外我也不太欣賞侍應的服務態度,總是時不時打量客人,好像我吃飯的模樣很囧(就算真的很囧也不應該如此吧~),對客人的詢問、請求給出的反應也總是慢半拍,好像有點心不在焉。
不管怎樣,縱然是有缺憾的一餐,可是能在週末和TC悠哉游哉的享受2小時的清閒午餐也實難得。下個月就是一週年,到時更要好好想想去吃什麼慶祝呢

Anyways, for starters, the scallop salad with "Twyst" dressing was a bit on the raw side. The scallops were meant to be seared but they hardly were seared and seemed more like scallop sashimi. We also tried the foie gras, which went really well with the sauce and figs, and was excellent overall

For the second course, I had an abalone risotto. The abalone was coated in bread crumbs and baked. The taste good but I didn't think the bread crumbs really went with it. The risotto was alright but tasted a bit like Chinese fried rice! My friends also tried the shrimp ravioli, which according to them had some pork in it and tasted exactly like wonton. The tomato consomme was good and also came with a wonton.

The steak, which I had for my main course was cooked nicely. The only thing was that the potatoes on the side were a bit raw and crunchy.

This is a very small and private restaurant and would probably be quite appropriate for private parties. There's also free corkage, cake charge is around $100.

The only problem is that the toilet is extremely hot and the fans in there hardly help! The restaurant should probably do something about the heat. Other than that, the price and quality made this a reasonable meal, but nothing really stood out to make me want to come back again.

Always on the lookout for nice restaurants that don't charge corkage, I went here for dinner with a friend & took a nice bottle of red with me.

The menu is small which, paradoxically, made it more difficult to order. As I understood it, we had to order a minimum of 3 courses each, for which there was a set price.

My friend eventually decided on the Boston Lobster set menu (4 courses) & I ordered a soup and a main (intending to have a dessert).

The lobster starter was salad with mango and lots of very tasty looking lobster meat. The consommé with wonton that I had was very nice but a bit salty. My friend's soup was next - a sort of bisque which resembled a cappucino. She loved it.

Now to the serious stuff, the mains. The lobster main was served with pasta and I am told it was delicious. My pork was beautifully tender & perfectly cooked with just the right amount of fat.

Baileys soufflé & an icecream dessert rounded off a very nice meal.

Downside: not enough vegetables

Service: pleasant but over-zealous at the beginning but settled down once the place filled up.

Oddly, when we ordered the second bottle of sparkling water, it took forever & I was told that they were having to go to their storeroom to get it. (I offered to pop out to the 7/11 instead but the waitress seemed a little confused at that.)

A good meal & I look forward to going back after their menu changes on 15 July.

朋友中總會大家間中一小桌人立㷫想開番支靚餐酒來配餐閒飯的. 西餐肯 Waive Bottle Corkage 的就只有樓上私房菜吧, 但香港的中菜酒家就未擺夠一兩圍也咪洗旨意佢肯豁免收開瓶. 雖唔想太 Take Risk, 但又唔要俾開瓶費, 逼不得已無其他再好辦法下, 也總會有再降臨私房菜的理由的. 經過千辛萬苦嘅研究, 包括實地觀察同看過了它的晚間堂食餐牌後, 最終也扑槌選了這裡: 本身沒什麼晚上食評可參考當 reference, 但隱約從菜單看得出它的菜式究思一點也不簡單, 不會只是普通豉油西餐貨式. 就試試這裡可否是可造之才, 有得跟同樓的強勁對手如 Fusion 或 '賓虛' 對撼 ! FREE BREAD BASKET AND APPETISER -
很有誠意的包籃, 莫講話普通餐廳, 有時就算連米芝蓮 或 Zagats 推舉的, 也未曾有這水準. Garlic Bread 同 Focaccia 好味. 另付了有點條像芝士條的 Brique Pastry Stick 有 Mediterranean 風味, 雖然好像帶有點酥同油嗌, 但總算是難得一見的新鮮誠意. 其他蕃茄 Concasse 醬或牛油, 同另上的吞拿魚或牛油果蟹肉 Canape, 也是開胃小前菜但澱粉質高了點. 現在回想起, 這包籃及配套也已是再來的原動力! 9/10

ANTIPASTI of KNOCK KNOCK OYSTER, SEARED JAPANESE SCALLOP, BOTAN EBI WITH SEA URCHIN -
新鮮是新鮮的, 尤其那隻牡丹蝦爆滿爽甜味. 帶子煎得剛好外脆內嫩留有鮮味, 要知這味簡單不過的貝類就是最應該但偏偏很難才做得好的, 因火侯跟時間的精確掌握度也只有靠累積多年經驗, 訓練有素的廚師才可每次達到. 可惜的是那加了酸酸調味的生蠔, 竟慘遭刀手分屍成不分頭尾的斷肢一樣. 咁大個仔餅乾碎就食得多, 蠔碎就真的希望是最初同最後一次. 想砌回原狀也難. 下次師傅請刀下留情, 還我隻完整生蠔好了. Overall 7/10

PAN SEARED FOIE GRAS WITH SAUTEED SHIITAKE MUSHROOM, CARAMELIZED FIG -
看上去很漂亮! 很少本地餐廳會肯花這心思擺得像藝術品般才上桌的. 汁同其他 garniture 還不錯, 但鴨肝煎得過火了, 乾了一點, 還略有微微苦味. 做得好一點的話也可會是推薦品, 叫來看也是低的. 這次不太行, 留待下次了. 5/10

18 MONTH IBERICO JAMON WITH MOZZARELLA CHEESE, APPLE, TOMATO CONSOMME JELL-O -
西班牙有名黑火腿食得多, 但通常是單食, 或配杯 Fino/Manzanilla Sherry 就是 perfect marriage. 見朋友叫這碟, 我心底裡第一反應便是, 在餐廳叫這火腿可能不太明智? 因這只是外來貨, 那豈不是給它賺了個雙重! 但來到後, 這念頭竟又打消了. 因為這方廚師為這 Jamon 配了一些特別但也很 work 的芝士, 水果同蕃茄啫喱, 還好像是少少海藻來帶出它的鮮咸味. 黑火腿本身也比想像出色夠霜降肥美但也有豬肉味, 但朋友說好像不夠咸, 也同意. 9.5/10

LOBSTER BISQUE WITH COGNAC CAPPUCINO -
這只可看照片, 因為無試, 但用上了 Cognac 做的 Cappucino 同看見色澤也估到, 這是真心想做好的一味. 聽說還不錯. Unrated.

這碟聽起上來也知道不會難食的. 因為有蝦有蟹肉再加忌廉同微酸的 Sicilian Sauce 併合起來, 就做成了一味不會敗的神話. 看它的手藝做得怎麼樣? 大慨可看那海鮮的鮮甜味同意大利雲吞皮的造詣, 已這兩樣都是祈望附近的水平. 可食也. 7.5/10

CHAR GRILLED US ANGUS RIB EYE, HOME MADE POTATO CAKE, SPICY CHOCOLATE SAUCE -
香港食燒牛扒的普遍水準也可說是略低的, 尤其是當靚質美國牛肉可以隨手所得, 不像在澳洲搬, 那邊流行食 Lean Meat 同肉味, 而肥牛要自家去 Asia Bounded Exporter 入貨或高級扒房才有供應的. 有這麼容易燒的肉, 理當是平均好食點的. Twyst 在這方面完全沒有托手肘, 它燒得唔錯的, 至少比同樓 Bonheur 的扒燒得美味 (但Bonheur 其他也不錯.) 用上朱古力醬聽落有點那個, 但其實在外國這 idea 是跟肉類 proven work 的, 也證明這裡的廚師有一定的跟隨著新的食物傾向同知識. Potato Cake 有點油同淋, 但 Overall 是合格有餘了. 8.5/10

SURF & TURF - GRILLED ALASKAN CRAB LEG & ROASTED US SHORT RIBS with MIXED HERBS AND COGNAC BUTTER -
看上去這還不錯的, 還有那香草干邑牛油也是 pipe 得靚靚同有 gimmick. 牛肋骨肉的肉質很好, 但可惜越食越覺那醬汁怪怪的, 好像有點甜得嚟苦苦地! 阿拉斯加蟹腳聽說有點兒太咸了. 這碟唔錯的但執行方面, 有待改善. 6.8/10

TRADITIONAL ROASTED CHICKEN, WILD RICE WITH CHANTERELLE & PORCINI -
也做得有水準, 皮脆肉嫩有汁, 調味就單調得嚟保留了雞味. Wild Rice 有點像慥米, 好食但一定要嘆的是, 那什麼 Chanterelle 或 Porcini 基本上是沒有的. 換來的只有是 Enoki Mushroom 幾粒, 我覺得太取巧了, 有點欺騙食客.
我也是看了你寫的內容才叫這碟雞的, 不可饒恕. 6.5/10

SOUFFLE OF GRAND MARNIER -
比起很多港式或大平館梳乎厘, 這裡的算是不錯了. 至少不怕好像食'紙包蛋糕'似的! 要知道, 真正的 Souffle 是應該好像食風的一樣... 因為它名字的解釋, 就大慨是好像輕輕'吹起'的聲的意思. 食得出是有橙酒味, 但還是有點糕點feel. 再 light 多少少回過癮啲, 但當港式梳乎厘來食也很好吃! 7/10

總括來說, 這是一間有心機的 Private Kitchen. 起馬看得出菜單是廚房精心考慮過的傑作. 須然不是每碟也很好吃, 甚至有些是很睇得但就未是超級好打的貨式, 但講起食, 有時也要看它本身的 Attitude rather than Present Result 的. 有時食飯也是食它的心機同誠意, 也可以幾滿足的. 從那好食的麵包籃開始至後來大多的 dishes, 也看得到人家有的財產, 正就是誠意搭夠, 而基本功也是中上 level有餘... 這樣一來, 也真有可能一天, TWYST 可以打破局限創出新機, 越做越升呢也未定! 但首先要改進的, 不是 Presentation, 是 overall 的味道同 Balance. 但有'潛汁'的地方, 一定也會再來. MID -'4'

We had a gathering at Twyst for a friend's birthday at Twyst. The waiter was helpful and friendly when we made reservation to book a private room for 8 people.

As one of the advantages at Twyst has been free corkage, we brought a few bottles of white and red wine for dinner. I called the restaurant to decant one of the red wines for 30 minutes before we arrived, and they have followed the instruction. My friend who arrived before me had brought a bottle of Bordeaux Red (probably Cabernet sauvignon blending with Merlot) in 2006, and a bottle of premium Medoc (Cru Bourgeois) in 1999. As my friend was not familiar with wine, she had asked for the waiter's advice about the duration of time for decanting.

Here's what the waiter recommended to my friend: "The older the wine, the shorter time it needs to be decanted. The younger the wine, the longest time it needs". So he recommended my friend to decant the 2006 Bordeaux Red for 1 hour, and decant the 1999 Medoc for 20 minutes.

Oh wow! I guess it doesn't need to be a wine expert to figure out that this waiter was giving out wrong information to customers. And what's more interesting, what he called as decanting was just to open the bottle without pouring the wine into the decanter, or at least pouring into a glass to allow the wine to breathe. He just removed the cork and let the wine sitting there as "decanting".

I won't expect a waiter at a small restaurant to be highly knowledgeable about wine, but I think it is the basic requirement not to ruin the wine brought by customers. So according to his theory, a 1985 Grand Cru Classe Red will only need to be decanted fo 10 minutes! As I didn't want to make a big fuss at my friend's party, I just quiety requested them to bring a decanter to decant the wine, and to serve the wine with younger age first.

If he was unsure about the information, he should ask his superior to handle it, instead of ruining a bottle of good wine, and he might never know how much the cost and how meaningful the wine was to the customers.

I am not discouraging others to visit this restaurant, as their food, environment and service is acceptable and decent for this price level. But if you are going to BYOB to Twyst, please make sure you tell them exactly what to do, and do not rely on their knowledge. And I hope their management will be able to view this comment, and help to improve the service and knowledge of their staff. It's actually quite a shame.
