新一年,新的開始,總,是有許多借口讓自己迎新。今天和朋友來到了新開的鮨川,食我最愛的Omakase。一排無食,總是懷著滿心的歡喜,尤其這是家新的餐廳。這裏環境很新,一派日系風格。 坐在吧枱可以近距離看到師傅忙錄的身影。我們點了雲來試,因為價錢最合預算。 前菜先上,造型小碰而精緻。高野豆腐較硬身,外面是炸櫻花蝦,海膽鋪面;鴨胸上有芥末子,帶點嗆鼻。白子小小的一杯,滑不溜口! 先來的是左口魚壽司,晶瑩而肉質柔軟。赤貝好有口感,伊左目肉質鬆軟,入口細密,但帶爽。帶子壽司好肥美,上面有紫菜蓉,入口好清甜。 中場來了個燒牛柳,頗特別。上面的舞茸菇乃老闆自家農場種植,所以味道較街外的濃。牛柳嫩紅,3成熟的它不走脂厚路線,肉味夠。一旁的是芥本蘋果蓉,好清新,帶點嗆鼻的快感,它令牛肉變得不單調! 石垣鯛上有檸檬皮,所以入口有陣陣甜香,白蝦上壽司鋪有鳥魚魚子醬,滿口清甜膠質,魚子醬又帶點點咸。深海池魚上面撒了柚子楜椒,質感啫喱般爽滑但又帶微辣。 到了海膽卷,用的是北海道馬糞海膽,清甜非常,一如既往,用脆紫菜包住,師傅督促我地要快點食。因為有wasabi蓉在內,

接著的大蝦刺身是出自俄羅斯的蝦,好厚肉,而且較爽身,食完陣陣甜味不散,蝦身上[粉是用蝦頭去眼烘乾再打碎成粉,心思之作。

火炙金目鯛、魚皮焦香,有檸檬清香。大拖羅肥美到一個點,晶瑩透油的,師傅說特意做成這厚度,令入口即溶得黎配上恰到好處的飯量。到了最後的鯖魚,爽身得黎帶少許油花,和剛剛的大拖羅取了個中間點。食得飽飽的,壽司環節也走到尾聲。

然後飲一啖熱的鮑魚清湯,整個人都醒神晒。最後以一口超多汁的北海道蜜瓜作結,讓口腔在香甜中停下來,感到滿足非常。

這家新店位置方便,裝修典雅,Omakase的價錢也討人歡喜,絕對值得一試。
